My husband is from Niger and he misses the food there. I need recipes that would taste good and have him feel like he is eating from his mothers kitchen. I really appreciate any recipes I can get, please make sure they are the real deal please.

O JO JO MEAT BALLS


In a 2-quart bowl:

Combine: 2 Ibs. CHOPPED BEEF with

2 GREEN BELL PEPPERS, chopped fine
1 medium ONIONS, chopped fine
1 Tbs. SALT
1/2 Ib. WHITE POTATOES raw, peeled and grated
1/2 Ib. SWEET POTATOES raw, peeled and grated
3 EGGS.
Correct the Seasoning.

Chill thoroughly to set (at least 1 hour).

Form into 2- or 3-inch balls.

Fry in OIL until brown on all sides.

Serve with desired vegetables


PEPPER STEAK WITH COCONUT

Yield: 8 portions
Cut 3 lbs. TENDERLOIN STEAK into 1/2-inch thick strips.

Crack 1 COCONUT, reserving the water. Remove dark skin with vegetable parer and cut coconut in strips same size as steak strips.

Slice 4 GREEN PEPPERS in strips same size as steak strips.

In a 10-inch skillet:

Combine: 1/2 cup PEANUT or VEGETABLE OIL with

1 Tbs. SALT
1 tsp. BLACK PEPPER
3 cloves GARLIC, mashed (or 1 tsp. garlic powder)
a few drops TABASCO.
Saute the green peppers in the seasoned oil for 2 minutes.

Add strips of steak and saute for 2 minutes.

Add strips of coconut and saute for 2 minutes blending mixture together.

Add water to the coconut water to make up 2 cups. Bring to a boil.

Add: 2 Tbs. SOY SAUCE

2 BEEF BOUILLON CUBES.
Dissolve: 4 Tbs. CORNSTARCH in

1/4 cup DRY VERMOUTH and add to the sauce.
Stir over low heat until smooth and thickened to sauce consistency.

Pour over the PEPPER STEAK.


FRITTERS
Fritters are very popular all over Africa and are used as a side dish as well as a dessert. These are side dishes.

Use a pancake mix or, if you prefer, use the following batter.

Sift: 2 cups ALL-PURPOSE FLOUR with

2 tsp. BAKING POWDER and
1 tsp. SALT.
Combine: 2 large EGGS beaten lightly with

1 1/2 cups MlLK and
2 Tbs. VEGETABLE OIL.
Stir into the dry ingredients.

SWEET CORN FRITTERS
Add 2 cups KERNEL CORN (drained) to above batter mixture.

Drop by spoonfuls in deep fat at 375F until golden brown.

BANANA AND PEANUT FRITTERS
Add: 3 BANANAS, cut in slices

1/2 cup PEANUTS.
Drop by spoonfuls in deep fat, fry at 375', and cook until golden brown.

FRESH PINEAPPLE FRITTERS
Pare 1 PINEAPPLE, core and cut into 3/4-inch slices, then in quarters.

Dip in above batter and proceed as Banana Fritters.

To save time use a good pancake mix. Adjust the quantity of liquid as necessary.

OKRA FRITTERS
Add 2 cups COOKED OKRA cut in 1-inch pieces (drained).

Proceed as Sweet Corn Fritters.


CUCUMBER-ZUCCHINI SALAD

Yield: salad bowl for 8
In a 2-quart bowl:

Arrange in alternate layers: 2 medium CUCUMBERS, scored with a fork, not peeled but sliced very thinly

2 medium ZUCCHINI, raw, same size as cucumbers, prepared the same way.
Blend: 1/2 cup WHITE VINEGAR with

4 Tbs. SUGAR dissolved in
1 cup HOT WATER
1 Tbs. SALT
1 tsp. COARSE BLACK PEPPER (fresh ground if available)
1 tsp. CRUSHED RED PEPPER.
Drain any water formed from cucumbers before adding the dressing.

Allow vegetables to marinate in the dressing at least 1 hour before serving.

Serve with meat, fish, or poultry.

Note that no oil is used in the above dressing. The amount of sugar is not excessive for this kind of dressing. An artificial sweetener may be substituted for the sugar if desired.

In Africa many raw vegetables are used in salads. To tossed greens you can add raw cauliflower, young fresh broccoli, very fresh string beans, cut in small pieces, raw carrot rings, zucchini, or any fresh young squash. Or you may cut bits of yellow cheese and anchovies into your green salad as well as the raw vegetables. Always add thin slices of Bermuda onion.

lamb stew made with sweet potatoes/Yams
Black eyed peas with caramelized onions and oil infused with chili pepper
Beignette with a chili tomatoe sauce (made with tomatoes onion and chillis).
Common are tomato and onions cooked with oxo cubes and eaten over rice or spagetti/macaroni.couscou Hamburger/mince meat can be added as well.
Bissap - a drink made from hibiscus
Dates particularly during holidays.
Cooked collard or cabbage with ground peanuts, chilii and salt.

Sorry I am not giving exact recipes, some of the I just know off the top of my head. It changes a little if you go north, west or south. In the north many recipes are similar to Algeria.

INGREDIENTS INSTRUCTIONS
Makes enough for about 6-8 people.

4 cups (or about 1 liter) white rice
2 tomatoes and 1 bell pepper (without seeds if you don't like things too hot)
OR 8 ounces (or about ¼ liter) canned tomato sauce and 3 ounces (or about 90 milliliters) canned tomato paste
Onion
Salt
Dry Red Pepper (like Cayenne pepper)
Meat broth (about 1 cup or ¼ liters) or Magi cubes (about 4)
Water Unless the rice is pretty clean, you will want to rinse it before cooking it.
Put the rice and about 6 cups (or about 1½ liters) of water into a pot and place on high heat. (Some people prefer to boil the water and add the rice to boiling water. This is fine too.)
If you are using fresh ingredients (the tomatoes and pepper) blend them until they are smooth in texture (you can also grind the onion with this mixture).
Let the rice cook 10-15 minutes.
Add either the tomato/pepper mixture or the tomato sauce and tomato paste. If you have not added the onion, you can slice or dice it now and add to the pot, depending on how large you like your onions.
Add enough water to allow the rice to complete cooking (since you will not be draining the rice, it is better to add too little and check up on it often, than to add too much).
If you have any meat broth from boiling any meat, you can add it to this as well. Otherwise, unless you are a vegetarian, suggest adding about 4 magi cubes for taste.
Add about 2 teaspoons of salt, and about ½ a teaspoon of dry red pepper (as the rice is cooking, or as you are eating the finished product, you can add more of either one of these so I really suggest starting out small, also useful if different people who will be dining have different tastes).
Allow the rice to continue cooking until the rice is soft. If it is not dry at this point, then switch the heat to low to allow it to dry the excess water without making the rice much softer. (Also, some people prefer to bake it once they've added the ingredients...I suggest 350 degrees or so.)
Once cooked, add more salt or pepper to it if you wish.
HINT: Goes GREAT with dodo. and usually eaten with some meat on the side.

NIGERIAN PEANUT SOUP
2 Packets instant chicken broth and seasoning mix
2 c Water
1 1/2 sm Dried green chili peppers, finely chopped
1/4 c Each diced green bell pepper-and onion
3 tb Chunky-style peanut butter
In 1-quart saucepan dissolve broth mix in water; add chili peppers and bring mixture to a boil. Stir in bell pepper and onion and return to a
boil. Reduce heat to low, cover, and let simmer until vegetables are tender, about 10 minutes. Reduce heat to lowest possible temperature; add peanut butter and cook, stirring constantly, until peanut butter is melted and mixture is well blended. Makes 2 servings.
