Cucumbers, though this can be considered a fruit, ,I am going to put it in the vegetable category for now. I like cucumbers because they are very crunchy-like on the outside, yet they have the amazing ability to be able to quench our thirst. They are very good to just snack on while consuming all the nutritional values of it. They can be eaten raw or cooked, and you can make pickles out of them.

Carrots, because some tend to be sweet, and while being sweet, they are also healthy. There are very many different kinds of carrots, each unique and very delicious in their own ways. They can be eaten as they are or raw, and you can chop or grate them and put them into soups, stews, and sometimes salads.

Broccoli, because of how it's arranged. I like what's on top of each stalk, the dark green part. And the broccoli is very high in Vitamin C, and it a classic favorite in vegetable platters and dips.

Difficult... since I like most vegetables, but if I have to choose only three, I'll go for peas, onions and swedes and hope to find a patch, where spuds are growing wild, surrounded by lots of edible dark green vegetables;-)

Potatoes because you can do a million different things with them, and each dish is unique.
Greens like spinach, chard, mustard greens etc. because they are quick to cook and full of vitamins and flavour!
Red onions because you get the good flavour without the killer breath. And they're a gorgeous colour.
