Tabouleh is a good Middle Eastern salad that is served cold. See if the link below gets you to an easy recipe. I think you will find the bulgur wheat in the cereal aisle by the oatmeal. Or, you may need to go to the health food aisle.

English Scones and Lemon curd. (lemon curd is like the filling of lemon meringue pie so if you can't find jars of lemone curd make your own buy just making the lemon filling directions are the sidse of Jello leomon pudding boxes) Scones are pretty much bisquits. Bisquits with leomon jam so to speak.
Hummus. Middle eastern dish. Take a couple cans of chick peas also known as Garbonzo beans. Drain of fth eliquid from one can into a cup in case you need it. Pour the beans into the blender and add about 1/4 cup extra virgin olive oil. About 1/2 teaspoon salt and about 1/4 tsp paprika. Blend till it is smooth. You will have to stop often and stir this is very thick. When it is all blended scoup it into a bowl and pour a some olive over it, so you have some standing olive oil and sprinkle paprika on the oil to make it pretty. To dip into the humus you need pita bread. For your purposes you will want to have the bread cut into quarters. People are to put a bit of the hummus in thier plate and dip the bread into the hummus. it is really very good!

Try a quick Posole Soup; can be made with chicken or a lean cut of pork and served at room temperature: 1 1/2 pounds cut chicken or pork, cubed, about 1 inch, about 1/2 gallon of beef or chicken stock (depending if chicken or pork used), 2 large cans of white or yellow hominy, salt, pepper, little cayenne pepper, small can of chopped spicy green peppers(like jalapeno), can of crushed tomatoes, chopped onion, parsley or cilantro(maybe 1/4 cup-chopped), put all together in a pot for about 45 minutes and if it needs to be thickened, make a slurry with some masa and water and add to the pot...oh, and lemon juice from 1 lemon or lime...yummy!
