I am having a party for around 60 people and would like to do a chilli to serve with hot potatoes. Can you tell me a good and cheap way of doing this?

That's hell of a chili for 60 people. You'll need a large tureen or similar.

Ingredients:

(I never use garlic due to it's anti social properties and the fact that it makes me sick. Up to you. If you do use it chop 4 cloves up finely and drop into mixture.)

15 lb minced beef
1 dozen medium onions, finely chopped
15 cans of economy chopped tomatoes.
Tube of tomato puree
8 tablespoons chili powder
4 tablespoons black pepper..
4 teaspoons salt
15 cans economy red kidney beans
1/4 pint olive oil
145 pints beef stock. (Made with stock cubes, 1 per pint)

Method

Put the tureen on heat and add the olive oil. Drop in the onions and fry lightly. Add the meat and cook until browned, stirring frequently. Add the stock, chopped tomatoes, tomato puree, pepper, salt and chili powder and stir in. Bring to the boil then simmer for 25 minutes. Drain the beans and add, mixing in thoroughly. Cook for another 10 minutes. Adjust seasoning according to taste. I like to add a bit of paprika or cayenne. Ensure liquid doesn't dry up.

Optional : add chopped peppers, red and green, cut into small pieces, about five of each and simmer for another 10 - 15 minutes until softened. Can also add a few chili peppers chopped but don't get juice on hands as it burns.

Hopefully this should do you and not cost too much but, don't forget. there are 60 of them. Cook the potatoes as you will.

I always do chili with baked pototoes.
Ok you are going to need at least 4 to 5 kg minced beef 2 green peppers chopped finely and same with onion 3-4 packets of chili seasonings. depending on how much minced you will be using.
Now forget tomatoe sauce what you need is 3 cans of crushed or chopped tomatoes per every kg of minced. 1 can of chili beans it has to be chili beans per kg of minced.
You are going to need a big pot of perferably 4 big pots so borrow from friends if possible. fry the minced first with a drop of oil. then add the seasoning put into pots with the rest of the ingrediants and simmer whatever you do dont boil it overr low heat for around an hour stirring and checking.

To serve this what I do is buy big tubs of sour cream and a large alumium pan put the spread the sour cream evenly on the bottom of the pan poor chili on top of this sprinkle some chopped onions and shredded chedder and you have a lovely chili dip I often do this for partys as just that as a dip and if you go down that road you only need 1/2 of the ingrediants.
Instead of whole pototoes what you do is wash and split the potatoe in half remember to pierce the skin and bake in the oven for around 30-40 minutes check to see when they are nearly soft they are down and you have pototoe skins they go further and are great to put chili dip on top of

You can also do tortilla roll ups which is tortillas, cream chesse or sour cream ,taco seasoning. You mix the sour cream and taco seasoning together you spread it out evenly across the tortilla and spinkle shredded chedder. Roll them up like a taco and slice them you can get between 3-6 pieces per tortilla based on how big or small you slice place these on a tray all around the edges and you can place salsa in the middle. Serve tortilla chips and you have more then enough food for a party of 60 unless its going to be a meal finger food or snacks and dips always go overr best. good luck and enjoy your party

1 1/2 lbs ground beef
2 (15 ounce) cans tomato sauce
1 (15 ounce) can kidney beans
1 cup chopped onions
1 cup chopped green peppers
2-6 tablespoons chili powder


Saute ground beef, onions and green pepper until no pink remains in the ground beef.
Drain.
Mix beef mixture and tomato sauce in a large pot, cover and cook over medium low heat for 25 minutes.
Add kidney beans (do not drain) and cook uncovered for 25 minutes or until ready to eat

chili con carne is chili with beans. I don't think you would want to serve potatoes with that, way too much starch ! It's a meal in itself.

They have good recipies, or just get some ready made seasoning and that should be the easiest. I am making chili on Sunday but it is complicated with over 20ingrediants. Its my first time making it so wish me luck.
