What we deem as Mexican food is usually not true Mexican Cuisine. It is usually a short-order form of some of the Mexican favorites. I thought it was all the same too because I worked in a "Mexican" restaurant. I found out after moving to the Southwest U.S. that what I thought was Mexican food is actually TexMex. True Mexican cuisine has such a broad range from beef (de res), shrimp (camaron), chicken (pollo), and all kinds of meat to many, many, many spices. Chicken mole (pron. mo'-lay) is a dish that uses a chocolate based sauce...not your average ingredients at all! So, there is some truth to your question, but upon deeper investigation, I'm sure you'll find that its not as absolute as you might think. So, for the braver palette, I recommend looking up recipes from Mexican cookbooks. They will contain the standards, but they will also contain some of the 'off the beaten path' recipes that can challenge your tastebuds. My favorite is something called Albondigas (meatball soup).

Yeah you're so right! I never looked at it that way. I guess that's just the Mexican way like Italians and Spanish, etc have their own ways. It's sooo good though if you're into Mexican food! But that's what makes it Mexican, the ingredients they use and how it's cooked. It would taste weird ordering Mexican and having it taste Italian, right? :)

Must be pretty easy to make out a grocery list. The trick is in memorizing the names for every different combination.

Mexican American food is...you would probably encounter a more vast variety of foods in the actual country. For instance...Italian dishes (believe it or not) in Italy do not revolve heavily around pasta. In fact that is a totally Italian American thing. Going to Italy and eating their cuisine and sitting down in the average Italians home and having dinner you would see that they have a great emphasis around legumes, veggies of all sorts and fish.

Most of what we call Mexican Food in the US, is not eaten in Mexico. North Americans are responsible.
