Pronounced [soh-FREE-toh]. This sauce is made in Spain and Italy with similar ingredients, annotto seeds sauteed in pork fat then other aromatics are added including onions, green peppers, garlic, as well as pork then the ingredients are simmered until the mixture becomes thick. The resulting sauce is used in various dishes including soup.
Sofrito/Recaito
I have been blessed with a friend who has shown me what Puerto Rican cooking is like. Although we haven't had as many chances to cook together, one taste of her meal was all I needed to fall in love with her style of cooking. She is a dear friend I met at work but our other interests have brought us together.
She makes the most wicked beans ever with her recaito (a spice mixture). It's spicy and so flavorful. Mike fell to his knees when he tasted them. I just happily enjoyed them. She has kindly shared with me her recipe:
O's Recaito
Ingredients
1 yellow onion
1 head of garlic
3-4 aji dulce peppers/cachuca peppers
1 cubanelle peppers/banana peppers/green bell peppers
a bunch of cilantro (5 sprigs)
4-5 recao leaves [also known as ngo gai in Vietnamese]
Chop all of the above into an oatmeal texture mixture. I use a food processor. Freeze in ice cube tray or store in airtight container.
The difference between sofrito and recaito is sofrito has tomatoes in it.

I wouldn't recommend sticking some chuletas in the oven after dumping sofrito on them. However, you can make tons of great sauces with the sofrito or racaito first, and THEN put them in the oven. Fry either sofrito or racaito with 2 tbsp of oil, some adobo, sazon, pepper, salt, and, depending on which meat you use, the appropriate bullion. For example, throw some cubitos de pollo in if your using chicken, or de carne is your using steak. You can also add some garlic, onion, or green and red peppers. Let this cook on medium for about 5-10 minutes, and add a cup of water. Add a tbsp. of tomato sauce, and once the sauce has thickened, pour this on top of the meat you're baking. Allow to back for the appropriate time.

Sofrito: The Spanish sofrito is a sauce made by sauteing annoto seeds in rendered pork fat. The seeds are removed before chopped onions, green peppers, garlic, pork and various herbs are cooked in the flavored, now red oil until the ingredients are tender and the mixture is thick. The sauce is used as an ingredient for soups, sauces and meat dishes.
I don't have information on the recaito.

Sofrito is normally frozen when you purchase it and is used for seasoning purpose. Once you bring it home, keep in the refrigerator so that is not frozen.
Recaito is also used for seasoning. I think they have different spices and flavor, but if you are interested in giving your food the Latin taste, you can use either or both.
