jelaebee - i remember it as a kid, because my dad used to buy it for me from a sweet shop every diwali. it is fried, concentric rings of crisp orange colored pastry but it oozes tangy syrup when you bite into it. it's very sweet, and i am sure really really calorie laden, but that is my favourite because of that memory from when i was a kid.

Sandesh
225 gms Paneer
150 gms sugar
1 tbsp rose water
1/2 tsp green cardamom seeds (ground)
10 Pista (pistachios thinly sliced and crushed)
How to make sandesh:
Combine the sugar and paneer and mix well.
Place the mixture over the heat and stir constantly to avoid lumps.
When the mixture solidifies, splash the rose water on it and remove the pan from the heat. Stir few more times.
Place the cardamom and pistachios in two separate plates.
Now divide the mixture into several portions of the required size and flatten them to give the desired shapes.
Dip each piece into both plates in turn so that the front of the sandesh is coated with crumbs.
Serve cold sandesh.

Gajar Halwa, we have a Indian Buffet restaurant here, and the make the best one I have ever had, the sweet carrots, raisins and cashews, they add sweet cheese to the top.
I like to make it myself, but the rose water is hard to find, I like Gulub Jamun, or Kehir, the rice pudding made with pistacios and condensed milk

I find indian dessert a bit too sweet and not quite fond of it. Especially those serve at the wedding reception.

Motichoor Ladoo and Jelabee, probably the most unique and tasty for me. We make jelabee every now and then and i probably finish half of it before we've finished all the batter
