Well here is the recipe I use and it never fails..however it does contain shortening....

1 egg
1 1/3 cup milk (or 1 3/4 cup buttermilk)
1/4 cup shortening
1 cup Martha White Self Rising Corn Meal
1 Cup all purpose flour

Oven at 450 dg. F
Grease 9-inch iron skillet or 9-inch square pan...Place the pan in oven to heat first

Beat egg. Add all remaining ingreds, mix well. Batter should be creamy and pourable. If batter is too thick, add more liquid. Pour batter into hot greased skillet

bake for 20-25 minutes until golden brown

I always stick a toothpick in center to make sure it is done.

Cornbread Mexicana

Ingredients:

1 1/2 cups flour
2 1/2 cups cornmeal
5 teaspoons baking powder
1 1/2 teaspoons salt
4 tablespoons sugar
1 tablespoon cumin
1 teaspoon chili powder
1 can whole kernel corn (15 ounce), drained
1 can green chiles (4.5 ounce), diced
2 eggs, beaten
2 cups milk
1 stick butter, melted, (1/2 cup)
1 cup grated cheddar cheese

Preparation:

Preheat your oven to 425°F.

Add all of the dry ingredients to a large mixing bowl and incorporate. Add drained corn and green chilies. Add eggs, milk, melted butter, and cheddar cheese.

Mix well. Pour into a 13 X 9 pan (1/4 sheet), or muffin pans that have been sprayed with cooking spray. Bake for 20 minutes or until golden brown. Freezes well.

I like to make it the easy way. Get 2 boxes of Jiffy Corn Bread Mix, follow the directions like you would normally do & add about 1/4 cup of sugar to it. Makes it taste WONderful!

A Different Cornbread

Ingredients :

1/4cupVegetable oil
2cupSelf-rising cornmeal or
1xCornmeal mix
1 1/4cupMilk
1xEgg, -- beaten
1 1/2tspCracked fennel seed
1 1/2tspCracked pepper

Method :

* Preheat oven to 450 degrees. Pour the shortening in a 10-inch cast-iron skillet. Place the skillet in the hot oven. Place the self-rising cornmeal or mix in a bowl and whisk in the milk and egg.
* Add the fennel and pepper and stir until thoroughly blended. Stir the hot shortening into the batter, then pour the batter into the hot skillet. Bake 15 to 20 minutes, until done. Serve piping hot with butter.
* Yield: One 10-inch round

get a one or few boxes of Jiffy Corn Bread Mix, follow the directions (add milk, 1 egg) & add about 1/4 cup of sugar to it, mix well, put in oven.

One of the best recipes for corn bread is right on the Quaker Oats Box of Corn Meal. Try it; and I think you will be happy with it.

I have found the easiest and best recipe on the box of Quaker Oats Corn Meal. It makes a wonderfully moist and flavorful cornbread. I have been cooking for 40 years and consider this recipe a winner!

1 cup of self rising meal, one egg, 1 cup of milk and a little sugar to taste(optional). Mix together all contents. Add a little cooking oil to the bottom of your baking pan and set in the oven. Pour remaining of oil into your cornbread batter mix the oil into the batter. Pour cornbread batter into the pan and bake at 350 degrees. when start to brown rub a little butter across the top of your cornbread and bake until golden brown to test that cornbread is done stick a toothpick into the center of your cornbread and if the toothpick comes back clean the cornbread is done.

Around 6pm I'll be callin' everybody here to the supper table. Tonight, I'm baking porkchops which are dipped in egg, and then covered with flour and black pepper and baked to a crispy brown. I'm making two skillet's of corn bread that melt's in your mouth, I'll leave the directions below. I'm also fixing a skillet of fried mustard greens, I like to add bacon grease and plenty of salt with them. YUMMY ! And the kid's always love the macaroni and cheese because I use lot's of butter and a little sweet cream instead of milk. Last but least I've peeled and cut up the taters to fry but because mine always seem to stick in the skillet, my Mom will be in charge of them. lol



You make sure to try out my cornbread and when you do let me know how it tured out ! ok?



For one skillet of cornbread,preheat your oven to 425 degrees, grease up your skillet even on the sides and lightly dust some flour around in it. Get ya a mixing bowl and measure out two cups of corn meal - my favorite in Three Rivers-, add one egg, 1/3 cup of cooking oil, three tablespoons of sugar, and 1 and 1/2 cup of buttermilk. If you don't like buttermilk, just switch it out for the regular stuff. lol mix it all up until the lumps are gone with a wooden spoon. But don't mix it to long and don't ask me why as I never questioned my granny when she told me. lol pour the mixture into your skillet and slide that sucker right into the oven, bake it for about 25 minutes. To make sure the cornbread it done you can stick a butterknife in the center and if the butterknife is clean, your cornbread is done. If any mix comes out on the butterknife leave the cornbread in the oven for a couple of more minutes. I usually stand there and check it because I don't want the top of the cornbread to dark. Once it's out of the oven, cut you a wedge out and lay the butter to it ! Or wait until it cools and try it in a bowl of cold milk or buttermilk. It's better than a roll in the hay, I'm tellin' ya ! LOL I've been lonely, way to long ! LOL Hope to hear from all my cornbread lovin' friend's !!!!!!!

Jiffy corn bread mix...Quick & easy you can add corn,peppers,chesse.... what ever ...make it your own kinda bread....Thanks <:3 }~
