Crackers! Not sure what varieties there are in the States (I seem to remember being hugely disappointed as most were cheddar cheese flavoured=P) but in Canada they have Vegetable Thins, French Onion and other kinds which are tasty without dairy products in them. You could also get plain crackers and make little sandwiches with soy cream cheese or peanut butter....
Also, some dried cereals are good to munch on! And sliced up green pepper or celery with salad dressing as a change of veggies.

Potato Vegetable Chowdar - Vegetarian - Soup
5 cups vegetable broth (water is fine, but
not as tasty)
1 cup tomato or vegetable juice
1 cup peeled tomatoes, cut in small pieces
1 cup carrots, chopped
1 cup green beans or yellow wax beans
1 cup onions, finely chopped
1 cup zucchin or yellow squash, thinly sliced
1 cup leek, chopped
2 cups unpeeled red potatoes, diced
1 cheesecloth bag of fresh herbs of choice
(parsley, basil, etc.)
2 teaspoons salt
Bring liquid to boil in a deep soup kettle. Add all vegetables
and seasonings. Turn down heat to simmer and partially cover the
pot. Simmer until vegetables are tender. Serve hot with crusty
whole wheat bread and a light fruit dessert.
Variation: Almost any vegetable but onions, tomatoes, and the
potatoes can be substituted for another vegetable. Don't use the
cabbage family because the flavor is too radically changed.
Green peas and baby lima beans are a great addition, as is 1/2
cup of corn kernels.

I like 100 calorie packs, Goldfish, grapes, peanut butter crackers, Orville Redenbacher Smart Pop popcorn, Yogos (I LOVE yogos),apple slices with peanut butter (Jif makes peanut butter to go dip cups now), cheese slices with crackers, mandarin oranges, granola bars, and reduced fat Pringles...to name a few! I've been on and off Weight Watchers for a few years now so I've found several low-cal snacks that I like. I think green grapes are a great snack food, and I love peanut butter. Both will tide you over when you're feeling real hungry! As for lunch foods, Smart Ones and Lean Cuisines are good. I really like Smart Ones fettucini and Lean Cuisine french bread pizzas. There is also this flat bread called "Flat Out" that comes in a lot of different flavors and it is great for making wrap sandwiches like turkey, chicken, or even little pizzas or PB & J roll ups.

What about hummus? Have you seen the soy lunch meats? They are full of protein and according to the zone cook book they are very easy to diget. There are rice cheese slices. There is a product called gimmie lean. It is a good product to make spagati sauce with and it is packed with soy protein and is fat free. You can use whole grain pasta. I like spelt pasta. You can make bean buritios or lentials and rice. Eden foods even came out with nuts and rice and bean dishes. These make up complete protein dishes. Lentil or split pea soups are good. I cut veggies like zuchini and yellow squash into slices and much on them. I am lazy and it is easy. Cherry tomato or grape tomatoes are easy as well as sugar snape peas. Edamame is another easy one full of soy protein. You have tons of options. Throw in a apple, pear or tangello and a soy yogert and you are ready to go. You need to shop at a natural market some of the time to get some speacial items.

Here's a few ideas:
1. make cold salads for the week and put them in little tupperware containers: pasta with veggies, chickpea and spinach, fruit salad, and corn salad
2. Try fruit leathers - a natural vegan form of fruit rollups about 59 cents each
3. Try Larabars - about $1.79 each but completely raw, vegan, and yummy (healthier version of Powerbars)
4. Hummus and pita
5. Peanut butter crackers (just bring the whole jar and crackers in and make it at work)

I'm a freak for trail mix. I could live on that and whole wheat crackers...
Bag up little snack sized bags of carrot sticks, celery sticks, trail mix, seedless grapes, whole wheat crackers, pita chips, flavored rice cakes (my favorites are sour cream and onion... and caramel), dried cereal, granola or popcorn.
Have a little jar of peanut butter in your desk to put on stuff, bag a bagel (ask your deli or bakery to run your bagels through the slicer sideways so it makes bagel chips... mine does it for free.) Mini muffins, bananas, pears, plums clementines, apples, etc all travel easily. If you eat eggs, hard boiled eggs are a great high-protein pick me up in the afternoon.
Sometimes all I need to get me through a couple of hours is a can of V8 juice, so I tend to stash that in the bottom drawer :)

Peanut butter crackers...or any crackers w/ toppings are always a good choice. Spice up your carrots and other veggies with flavored dip...dunno if that's dairy or not. Look for things w/ cinnamon, fruit flavors, and peanut butter. You can probably tell that I love peanut butter & banana sandwhiches (elvis' favorite food.)

sprouted almonds. They are super healthy and taste great. It's easy: soak 1/2 cup of almonds in 1 cup water overnight and Voila! You can sprout them longer by changing the water in the morning and evening for up to 3 days.
I like to sprout my almonds, then dry them using a clean kitchen cloth, and mixing them in a bowl with a little olive oil, some salt, and chilli powder (or other spices or herbs) and then dehydrating them in my Excalibur dehydrator. I make a bunch and it keeps for weeks.
Sprouted nuts and seeds are healthier and easier to digest than non-sprouted. They are also lower in fat.
You can use other nuts or seeds the same way, such as sunflower seeds, pumpkin seeds, hazelnuts. etc...

An apple and small container filled with peanut butter. Slice your apple and smear with peanutbutter for a quick pick-me up. Peanuts and cashews are a nice snack too. Even homemade granola.
