I love roasted asparagus and roasted zucchini. They taste great, are good for you, and look like you put in a lot more effort than you did. :) For both, preheat your oven to 425 degrees. Take off the tough bottoms of the asparagus stalks. Drizzle some olive oil (or use olive oil cooking spray to cut on calories and fat), and sprinkle some salt and pepper. Pop into the oven for 10 minutes. For the zucchini, slice each zucchini about 3 times horizontally. Slice each of those pieces in half vertically, then in half vertically again. Drizzle with olive oil (or again use the cooking spray), sprinkle some salt and pepper, and cook for about 20 minutes. I always check my veggies periodically to make sure they don't get too crispy. This is an easy way to make a lot of veggies or enough just for yourself. Have fun!

I didnt know there where elegant veggies i would just put out the veggies and im sure they will get eaten

Asparagus is always great, and you have the option of bundling a few spears per person and tying with something like proscuttio or maybe chives, depending on what you're serving.

Fresh baby carrots are also a good choice.

Get some asparagus (thin), goat cheese, ready-made pesto, prosciutto, olive oil, salt, pepper.

Blanch the asparagus for 1 solid minute. Move to ice bath.
Mix pesto into soft goat cheese to nice green color.
Dry asparagus, then salt and pepper.
Drizzle with olive oil.
Mash goat/pesto between two asparagus, then add third on top to form triangle.
Wrap with prosciutto
Cut at angle.

Artichoke Hearts or Asparagus just scream elegant to me. I guess because I've really only had them at really Ritzy homes and restaurants.

How about artichoke hearts and asparagus. They're a bit on the expensive side, but absolutely lovely additions to the table.

A nice crudité. Crudités often include carrot sticks, pepper strips, celery sticks, and asparagus spears. They are usually served with nice sauces instead of dill or ranch veggie dips.

asparagus is a pretty popular one, mixed veggies - the more colorful the better(include squash, just cook them with some wine and garlic, lastly artichoke is a always different and enjoyed. good luck

Eggplant, celery, etc... all the pretty veggies. Also, it's fall... I'd put some nice looking squash and gourds out for decoration.

I have tried Asparagus in the last year and absolutely love it. Asparagus, wonderful alone, or you could cover with a white sauce.
