Roasted Garlic Hummus Recipe #173023

1 head garlic, about 3 1/2 to 4 oz
2 tablespoons olive oil
1 (15 ounce) can garbanzo beans, drained
2 tablespoons lemon juice
salt, to taste
pepper, to taste
Cut garlic head in half crosswise. Rub cut surface with a little of the olive oil. Place garlic head halves, cut side down, in an 8 or 9-inch pie pan; cover pan tightly with foil.
Bake garlic in a 400° oven until garlic is soft when pressed, about 40 minutes.
Squeeze garlic cloves from skin; discard skin. In a blender or food processor, puree garlic. Add remaining olive oil, the garbanzos and lemon juice. Whirl until smooth, scraping container sides as needed. Add salt and pepper to taste. Scrape into a bowl and serve with crackers, breadsticks, pita crisps or raw vegetables.

You can eat vegetarian too on the picnic. We are vegetarians and usually do the hummus, cheese baguette thing on picnics. Prepared salads from your local natural food store are easy and usually pretty good. Also, you could go out of your way to purchase locally grown/prepared foods. Depending on where you live, there are ususally local dairy producers that make yummy cheese, goat or otherwise. Just try to keep it simple and neat as you don't want something dribbling down you chin as you discuss your future!

I do slice cukes, grapes tomatoes, celery sticks, mini carrots all raw to use in dipping. Crackers work too. My fav dip is Hummus.. I like Tribe of 2 Sheiks best of the ready mades. Fresh fruit, grapes, slices apples(tossed with lemon juice) Any other in season fruits.
Hummus also makes a great sandwich. Spread on good bread, add spourts, tomatoes slices, avocados slices.

All these are in the grocery store- good luck. Prepare with some effort, make it all disposable, so that you don't have to carry things. Do pack bug spray and paper towels.
Great Vegan meals.
Greek-Humus and Tabuli with pita bread is wonderful.
Raw fresh veggies (carrots, celery) or blue corn chips with spinach/artichoke dip.
Fresh fruit put on shish kabob sticks is wonderful. [Or mixed can fruit chunks like pineapple/mango/peach/cherries. Do it the night before and freeze it- they will defrost by the time you eat them at the park- like a fruit Popsicle) OR Strawberries with chocolate (if he eats that?)
Fresh lemon or lime juice with a hint of cherry juice is great!
My favorite thing was always a fresh "relish" tray with 3-types of things: pickles-(sweet, kosher spears and dilled veggies (okra/carrots/pearl onions) and different snacks like olives (spanish green/black/kamata) with a dipping sauce, like ranch ( IF he eats dairy- ask) slices of cucumber, carrots, celery and red bell pepper.

To begin, Veg drink,chive dip.celery,carrots, Veg hamburgers,tomato,pickles,poto salad. Keep all cold foods cold drink's and other. keep hot food hot,take plates so forth.Music you know he likes. For dessert take choc covered strawberry's.Show him he is special no matter what you may be going through right now. Listen to what he says. Show respect to each other even if you disagree.

Both are good for you, each fruit/vegetable has different vitamins. Therefore as more variety, as better. Vegetables have generally less sugar than fruits.
