You may be using Tortillas that are too dry or too cold.
Warm them up if they are too cold and if the are dry try a quick steam just a little then fill and fold.
Don't over fill it seams that when people make burritos they put in all over their favorites and end up with too much in them.
That's why you can't fold them properly and keep them together,

Hi...Just make sure you use fresh tortillas and fold them by turning the ends in first and then rolling them. They should stay closed. For burritos, just put the side with the edges down in the pan to help keep closed. For chimi's, I agree with the 1st post, go ahead and secure them with toothpicks. I do it all the time myself. They pull out easily and survive deep frying just fine. You may be overstuffing your tortillas some too.

umm, first lightly warm the tortillas so they won't break
then you just kinda have to use an edible glue, take about 2 tsp of all-purpose flour and add a bit of water to make a paste, about the same thickness as honey, make sure there are no clumps of flour, then use your finger to smear it on wherever you want to stick
it doesn't change the flavor or anything, and it won't mess up the filling

Good suggestions here. This is what I do:
a) warm the tortillas lightly in the mw,
b) lightly coat the tortilla with a layer of re-fried beans, (will act like a "glue")
c) add stuffing, roll up and carefully, (so as not to tear the tortilla) insert a toothpick to hold closed.
That should do it.....

Get a gallon sized Ziploc bag, nuke (microwave) one tortilla 20 sec, 30 sec for 2 or more... have your filling ready to go, cause ya need to wrap as quickly as possible,

I agree that they may be too cold or too dry, if they are just the right moisture, they will stick (our you could hold them down w/ a little melted cheese).... my husband always puts his on a plat, finely mists them w/ water (not to soak them, just a little moist), then places a paper towel on it, then puts in the microwave for maybe 15 secs, depending on ur microwave, but just to get them soft and slightly warm, and that works great, if u leave them too long, they will try out....too much water they will be soggy....

Don't fill them so full and you should have enough space left on each side that you can wrap it together without it falling apart.

i'd try a good silicone adhesive. allow to set for 24 hours to cure, for best results that is.
