Strain a pot of low fat yogurt
Grate a cucumber, and sprinkle it with salt and let it stand for a while.
Drain off all the liquid which will come out of the cucumber, and pat the remains dry with a kitchen towel.
Add the grated drained cucumber to the strained yogurt, along with a finely chopped clove of garlic (you could also add a finely chopped green herb of your choice at this stage.)
Use to fill your sandwich no spread or mayo necessary.

Avocado & cheddar cheese with salad (and lots of pepper!) - although that's not really low fat!
All the Quorn deli slices are good, esepcially turkey and peppered beef.
Or houmus / vegetarian pate - all with lots of salad, you can't have a flat sandwich, it has to be stuffed full of crunchy salad!

Roasted red bell pepper hummus.I make it myself, and I don't put too much oil and tahini in it - most of the time, I don't even use tahini. Here's a quickie recipe; 2-4(depending on their size) oven-roasted red bell peppers(roast them yourself at 400 degrees, turning them occasionally,til skin is blackened in places, for 15- 20 min.); 2 fifteen to sixteen ounce cans of garbanzo beans(chickpeas or ceci), drained 4 tsp. of olive oil; minced garlic(oven-roasted or from jar) - the amount is up to you; a lot of paprika(it enhances the red-orange color) and cumin to taste(personally I prefer a lot of curry powder) and a little salt; and 4 tsp. of lemon juice. Divide ingredients into 2 batches and process 1 batch at a time until creamy; then mix both batches together for consistent flavor. Chill for an hour or two(you can, however, eat it hot or cold).If you want to add tahini, add 1 tbsp. of it to each batch when you're processing it.

certainly one of my favorites is a "mock" reuben: a million/2 cup saurkraut, drained 2 slices Alpine Lace low fat swiss cheese 2 slices 2% American Cheese 3 skinny slices dill pickle 2 slices tomatos 2 slices dark rye bread a million T easy mayonaise a million T dijon mustard blend mustard and mayonaise jointly. unfold on rye bread and layer as follows: swiss cheese, saurkraut, pickles, tomato, american cheese. Grill until cheese is melted and bread is crisp. YUM!
