Recently purchased (less than 10 days ago) some organic carrots and put them in a paper sack in the panty/laundry room. Some have gone limp. What would account for this? Don't recall any being limp when I removed them from the original plastic bag.

Maybe I should have mentioned that I bought 25 lbs. not five.

Try blanching them then putting them in the freezer. You can blanch vegatables by putting them in a pot of boiling water for five minutes, then putting them in ICE WATER in the sink until they are completely cooled. Stick in a frezzer bag, then store in the freezer. We have a garden, and this is what I do with most of our extra produce.

Put them in a cool basement in wooden boxes in dry, clean sand in layers (that is sand-carrots-sand), so that the carrots are not touching each other. The bottom layer and the top layer of sand should be at least 10 cm. (about 4 in.) deep. The layers in between should be at least 5 cm. (2 in.). The boxes should be off of the floor (on pedestals, saw horses, . . .) and the top should be covered with a wire screen (to make sure no rodents can get at them during the winter. We've stored 100s of kilos this way on the farm. The carrots stay good through the winter, but like any other stored veggie or fruit they need to be watched to make sure that there are not some that start to go.
Before treating the carrots this way let them dry in the air, out of the sun for a couple of days first. Make sure they have no bad or soft spots before they go in.
If you have a lot of carrots you can also pickle them in brine. Just clean them and if you want to peel them. Put them in a clean container, and cover them with brine (about 1 tablespoon of coarse pickling salt to each quart of water - bring to a boil, let cool down to room temperature before using). If they start to float, put a clean board and rock on top to keep the carrots covered, but this is usually not necessary with carrots. Stir gently with a wooden or stainless steel implement every day. After about 14 days they will be lacto-fermented with a nice white foam on top. These can then be used. They are delicious. They are not crisp, but they will keep for a long time. It's best to keep them in a cool spot.
