Insulin does not come in pills, for humans or any other animal. Insulin is destroyed if digested through the stomach which is why it is injected by type 1 diabetics. You are probably thinking of the many oral medications that type 2 diabetics take. Type 2 diabetics (the majority of American diabetics) are still making some insulin and the medication helps them use what they have and make more.
If your vet is telling you your dog needs insulin shots it is probably because it is a type 1 diabetic. Human type 1 diabetics can have insulin pumps implanted under their skin which might be possible in a dog. You could ask your vet if there are pumps available for animals, they are probably a bit pricey though.

Well, in the first place, they are not "insulin" pills. Taken orally into the stomach, insulin would be immediately inactivated by the liver and therefore would have no effect. The pills given for type II diabetes mellitus are to help the insulin one has interact with the receptors, making the transfer of insulin and glucose into the cells more efficient.
Secondly, insulin can be specific to species.
Give her some kind of non-food treat after the injection. If she likes a good rubdown, make it that, if she likes to chase a ball, make it that.

I've had a diabetic dog and NEVER had a problem giving shots.
Have your vet watch you give a shot and see if you could do something differently/better.

While most medications will work in both K-9s and humans, there are differences that must be considered. The best solution would be to ask your vet for alternate medications.
