This is from Bon Appétit and is excellent.
GERMAN POTATO SALAD WITH BACON-VINEGAR DRESSING AND DILL
2 1/4 pounds medium-size red-skinned potatoes, unpeeled, cut into
1/4-inch-thick slices
6 bacon slices, chopped
1/2 cup finely chopped red onion
1/2 cup white wine vinegar
1/2 cup water
2 teaspoons coarse-grained mustard
2 teaspoons sugar
2 teaspoons salt
1/2 teaspoon ground black pepper
1/4 cup chopped fresh dill
Steam potatoes until tip of knife easily pierces center of slices, about 10 minutes. Transfer to large bowl. Cover with foil.
Sauté bacon in large skillet over medium heat until brown, about 3 minutes. Using slotted spoon, transfer bacon to paper towels. Discard all but 2 1/2 tablespoons drippings. Heat drippings in skillet over medium heat. Add onion; sauté 2 minutes. Whisk in next 6 ingredients. Simmer until mixture is reduced to 2/3 cup, about 4 minutes. Remove from heat.
Add potatoes to skillet and toss to coat with dressing. Let stand 3 minutes. Sprinkle with chopped bacon and fresh dill; toss. Season to taste with salt and pepper. Transfer potato salad to serving platter. Serve warm.

German Potatoes
4 to 6 baking potatoes
6 to 8 slices bacon
1 onion chopped fine
cabbage (approximately 1/2 head depending on taste)
Fry bacon in large frypan.
Fry bacon until crisp, remove and crumble. Brown onions in bacon
grease, until transparent and slightly brown, remove and set aside.
Slice potatoes into bacon grease (you may need to add a small amount
of oil). When potatoes are almost done, mix in the bacon and onions
and layer cabbage on top. Cover with a lid and turn heat to low.
Cook for approximately 10 minutes until cabbage is soft. Remove
lid, chop and mix cabbage in with potatoes and turn heat to medium.
Cook until potatoes and cabbage are done, approximately 10 minutes.
Add salt and pepper and serve with any meat. All the ingredients
can be varied, depending on taste.

Do you mean german potatoe pancakes? cuz you take an egg and scramble it in a medium sized bowl, then you throw in sum salt and pepper, a small chopped onion, and about a 1 1/2 cup of frozen hash brown or shredded potatoes, then you cook them on a skillet just like an omlet or pancake

Love German Potato Salad. Try this recipe, it's one of my favorites!!
German Potato Salad
INGREDIENTS:
4 potatoes
4 slices bacon
1 tablespoon all-purpose flour
2 tablespoons white sugar
1/3 cup water
1/4 cup white wine vinegar
1/2 cup chopped green onions
salt and pepper to taste
--------------------------------------------------------------------------------
DIRECTIONS:
Bring a large pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, cool and chop.
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Reserve bacon fat.
Add the flour, sugar, water and vinegar to skillet and cook in reserved bacon fat over medium heat until dressing is thick.
Add bacon, potatoes and green onions to skillet and stir until coated. Cook until heated and season with salt and pepper. Serve warm.

there are many recipes for German potatoes i am wondering if your meaning hot German potato salad..try looking that up.. it is a great dish ......PBS has a lot of German cooking shows you might try Russian potatoes they are similar...but more old country.....
