Some people eat them raw with lemon juice, like oysters...
I prefer them steamed or boiled with an onion, bay leaf, and a glass of white wine...
The national dish of Belgium is "des Moules et des Frites"...
which is steamed mussels served with fries and mayonnaise.
Mussels are one of the main ingredients you put in a paella...their cooking liquid is strained and used to cook the paella, and the mussels on the half shell added at the last minute.
Or make a chopped salad of red & green sweet peppers,
onions, and diced tomatoes and add cooked & shelled mussels and some small shrimp. Add olive oil and some lemon juice or vinegar. This is called a SALPICON DE MARISCOS
In Spain besides the fresh ones, we have them in tins...plain or in ESCABECHE (spicy sauce) (yummy!)
And when you cook them, don't eat the ones that haven't opened naturally in the cooking process...It means they weren't really fresh. Mussels have to be alive when they go into the pot!

re from Maine and love our mussles. Be sure to clean thm well so not so gritty. Heres one recipe, but most of the time we steam with rose wine or beer and seaweed. Dip in butter

STEAMED MUSSELS IN SPICY GARLIC SAUCE
2 dozen mussels (Maine are preferable)
1/2 c. cornmeal
1 tbsp. olive oil
1 tbsp. crushed garlic
1/4 c. blushwine (water can be substituted)(beer)
Pinch salt (if necessary)
Sea weed (optional to line bottom of pot)
1. Remove string-like beard from mussel by pulling and cleaning outside shell if necessary discard any that will not stay closed.
2. Place in large pot and completely cover with water.
3. Stir in cornmeal and place in refrigerator for 1 to 2 hours. (This will purge most sand from inside.)
4. Drain and rinse off mussels.
5. Add oil and garlic and sweat it till clear
6. Toss mussels in and stir until coated.
7. Pour wine (or water) in pot and cover.
8. Bring to boil and stir occasionally until all shells open. (Some may not, but can be forced.)
9. Remove mussels to large bowl. Serve with bread or over pasta

My favorite way is mussels cooked in an Italian tomato marinara sauce and spread over spaghetti. They can also be served boiled with fresh lemon to taste or cooked and out of their shells and cold and added to a nice Salad.

If they're small: Eat the first one with your hands. Then use the empty one to snap up the flesh inside the shell of the other ones.
