There are no "healthiest vegetables," I'm sorry to say. Each vegetable contains a certain vitamin, mineral, or other natural essence that the body needs. Ever heard the phrase, " The more color there is, the healthier it is for you?" It's true! Mix and match -have fun experimenting with different sorts of vegetables! Just make sure you have a good variety available to you daily.

All vegetables have some merit, even if it is only because they give you fiber. Vegetables with darker colors such as broccoli, spinach, carrots, and tomatoes generally have important vitamins and antioxidants. Vegetables like iceberg lettuce and celery aren't as nutritious, but do have the fiber benefit. Try to eat vegetables in a rainbow of colors every day - orange, red, yellow, green.

The trick is to eat some of all of them. They all have certain
things the body needs. I've heard we shoudn't eat vegetables and fruit at the same time. They have enzymes or whatever
that counteract each other, and you lose the nutrients, and
are just filling your stomach.

The darker the better...leafy greens - and as uncooked or raw as you can eat them. We eat many raw vegetables now in large salads....much better for you. Overcooking depletes veggies of their vitamins and minerals.
