Mono-diglycerides remain the most widely used emulsifiers in food production. These are used in a wide variety of food manufacturing such as, breads, bagels, muffins, cookies, cakes, pies, donuts, pasta mixes, potato chips, ice creams, almost all packaged desserts, nearly all margarines and other spreads. If I am right i believe it contains all natural fats, animal (cow- or hog-derived) or vegatable. It depends on which one u buy.....believe me their are many different brands with many different ingredients used.

I believe that most of the monoglycerides and diglycerides come from animal origin. This is based on an extensive googling I had done a couple of months back. Even breads contain them. So, to avoid them, I buy mostly from the organic section, where you have various other options also. If you have a whole foods store nearby, it will be the best bet.

First off, you're talking about two things.

Mono(one)-glyceride
and
Di(two)-glyceride

your "tri-glyceride" is your uber-toxic "transfat."

They are "fatty acids." Most from coconut oil and palm kernel oil. Best to avoid them because they're processed. Go straight for Coconut oil - which somes in a solid and should be eaten with a spoon in small amounds. Or Red Palm Oil. Same thing...

Either or should be marked virgin, meaning unprocessed.

Whey is the liquid element of milk (no longer the casein). it rather is the liquid you get while curdling milk and straining out the solids. Rennet is from calves' abdomen linings yet now some rennet is created from fungi. although that 'rennet' is in basic terms stated as microbial enzyme.
