Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

An ideal fast food chain would be the one that serves BOTH vegetarian and non vegetarian meals equally. 30 items on the menu should mean 15 vegetarian and 15 non vegetarian. That's the best way to "sell" the concept those who hate vegetarians or vegans or those who do not understand them By eating side by side with them, eating equally nutritious and delicious meals. Why the need for omni customers? because with about only 3 percent of the population being vegetarian or vegan( and not all of them will eat at a fast food joint to begin with), a solely vegan or vegetarian restaurant is not going to be very viable much less b profitable enough to be a "chain" restaurant. Restaurants are businesses first and foremost. hahahahahahaha....that's funny..an organic meal for less than the 3 dollars?? with green tea too??Are you kidding? No you're serious.. Well, I guess it doesn't hurt to dream sometimes...

One of my very favorite things, *ever*, is a slice of provolone cheese, a couple scoops of tabbouleh, and some roasted red peppers from the jar wrapped in a tortilla. Many, many things can be wrapped, though.

Fried rice with lot of veggies

Whole wheat lavash / tortilla wraps with lot of veggies / beans/scrambled tofu,. You can even add a little tomato sauce also to it.

Sandwiches with tomato,onion,lettuce and veggie deli slices (E.g: Lightlife)

Vegetarian noodles with veggies

Just try this 2 minute recipe: Cut few slices of bread into small pieces. Now, saute your favorite veggies plus spices in little oil, then add the bread pieces, add little salt and pepper to taste, stir for a minute and your lunch is ready.

Find Tofurkey deli slices. It comes in a variety of flavors. Whole foods sells it cheapest, but if you find one you like, a small health food store will sell you a case for a discount. Also, look into the Seventh Day Adventist church. I buy fake meats from them very cheaply. I am not a member of their church.

Take a wheat pita and stuff it full with veggies( tomatoes, green onions, cukes), add sunflower seeds, season salt, and if you dare cream cheese. YUMO

Make it simple...slices of onions and tomatos...followed by some Trident gum...lol Don't forget the salt...
