Fruit and veggie platters are great tasting and good for you. Try some tortillas and wraps, too, everyone loves them. Pasta and/or lettuce salads are good too. How about ordering something like Chinese, Italian, or Greek, once every week, for something special. Yogurt is always appreciated by dieting people. Tacos are easy: just set out piles of chopped up veggies, some cold hamburg, dressing, and the shells. If you have access to a stove, a big pot of soup would be nice once in a while. Bon Appetite!

We have board meetings once a month where I work and it's a constant struggle to find something new to serve. We have been blessed with a great cook, our CEO's wife! Hee Hee! We have served these things in the past year or two.
Taco/Burrito buffet
Chicken Strips and Potato Wedges
Chili-also you can add fritos and crackers in case someone wants a frito chili pie
lasagna, salad, french bread
salad buffet
hamburgers and hotdogs-we grilled ours outside, but a george foreman grill would do these nicely.
taco salad
fried chicken, mashed potatoe
we have even fixed spaghetti and kept it warm in a slow cooker until lunch

Luckily she always fixes our desserts too!
an easy dessert to do the night before is cookies, or you can buy a graham cracker crust already made and make chocolate pudding. Keep them seperate until right before the meeting so the crust doesn't get soggy.....then pour pudding in crust.
I hope this helps.

Is this something you have brought in or do you do it yourself?
brought in is kind of limited, just to what is handy and around you. If you can do it yourself, there are all kinds of recipes you can do in a crock pot (it's not just for soups). Also, briskets can be cooked while you are slleping at night and taste better not steaming hot (can do sides or make bbq sandwichs). Hope this helps.

Soup and stew selection with assorted breads and a plate of cheese cubes. Ask your caterer ahead of time to defrost / prepare several soups, like Beef Stew, Clam Chowder, and Gumbo. For a good customer, they will.

Pizza with specialty toppings, like half sausage, half broccoli.

Salad selection/buffet. Large bowl of Caesar, Bowl of Veggie vinaigrette, Bowl of Pasta salad with chicken or turkey.

I used to do this myself! Try these for something different:

Taco bar - different meats, soft and hard tortillas, lettuce, tomatoes, onions, beans, cheese, suaces, etc.

Family style Italian - trays of lasagna, pasta, salads, breads, etc.

Bar-B-Q tray - patties, hot dogs, brats, chips, potatoes, etc.
