We're having company over this week for supper but are on a VERY tight budget - any ideas on a fabulous meal we could cook for them that wouldn't cost too much? Any good websites on this topic?

If you want a recipie that will really knock their socks off and make them think you worked all day on it try my recipie for taco soup....1 can of black beans(drained), 1 can of whole kernel corn(do not drain), 2 cans of rotel tomatos(do not drain), 1 pound of lean ground beef(or turkey), 1 pkg of taco seaoning mix, 1pkg of dry ranch dressing mix. Brown and drain the meat, put the meat in a crock pock and add all the rest of the ingredients to the crock pot and mix. Add 1/2 cup of water to the mix and cook it on low for about 45 mins to 1 hour. Serve with shredded cheese, sour cream, chopped cilantro and avacadoes. You dont have to use all these toppings just take your pick and enjoy!!! Another penny saver...go to somewhere like subway where they give the day old bread away free...bring it home and melt butter and shake on some garlic salt to serve with the soup or buy a big bag of Fritos

Serve this w/ buttered adn parslied potatoes (red skin, quartered, boiled) and a simple vegetable. A loaf of French bread would be nice, too.

Caramelized Baked Chicken
Yield: 6 servings

3 pounds chicken pieces
2 Tbsp. olive oil
½ cup soy sauce
2 Tbsp. ketchup
1 cup honey
1 tsp. cayenne pepper
1 tsp Worcestershire sauce
1 clove garlic, minced
salt and pepper to taste

Preheat oven to 400º F. Place chicken in a greased 9”x13” baking dish. Mix together remaining ingredients. Pour over the chicken. Bake in a preheated oven for 45 minutes. Turn chicken over, baste, and bake 45 minutes more.

Pasta is great. W/ salad, garlic Toast and bottle of wine! Low cost and filling!
