All it is, if it is pure maple syrup, is the cooked down sap of maple trees and purely vegan since it is a pure plant product. The syrup vegans have trouble with is honey, because it is produced by insects- bees. Most vegetarians have no problem with honey because it is a product of the bees and doesn't require killing, the same reason eggs and milk are acceptable.
