ok, i know this is a VERY stupid question, but i am umm... vegetarian [sort of] ... anyways, and today i had cheese enchiladas... is there meat in it, or since it's cheese, is it only cheese?

No, it isn't a stupid question. The enchilada filling wouldn't contain meat. Corn tortillas are used (I have never seen corn tortillas made with lard), but it makes sense that lard could be used to soften them.
But, the sauce could contain chicken or beef broth, which you would want to avoid if you are vegetarian.

I have pretty much given up eating enchiladas when dining out- there are too many opportunities for a meat byproduct to be in them.

Black Bean And Cheese Enchiladas
Yield: 12 Servings

Ingredients

1 tb Vegetable oil
1/2 c Green onions; sliced
1 ts Garlic; minced
12 oz Canned tomatillos
4 oz Canned green chilies;
-chopped
1/2 c Fresh cilantro; chopped
1 tb Dried oregano
1 c Low-sodium chicken broth
12 Whole wheat tortillas; 8"
15 oz Canned black beans
8 oz Fat-free Monterey Jack;
-cheese, shredded, He

Instructions

Heat oven to 350 F. To make sauce, cook green onions and garlic in oil
until tender. Add tomatillos, green chilies, cilantro and oregano.
Continue cooking until sauce comes to a boil; reduce heat to low and
continue cooking about 10 minutes. Pour sauce into blender container.
Cover and blend on high speed until smooth.
Return to saucepan and stir in chicken broth. Cook over medium heat about
15 minutes. Dip each tortilla into sauce. Spoon about 1 1/2 tb. black
beans and 2 tb. cheese onto each tortilla. Roll tortilla around filling.
Place seam side down in 13" x 9" baking dish sprayed with non-stick
cooking spray. Pour remaining sauce over tortillas; sprinkle with
remaining cheese.
Bake at 350 F for 20 to 25 minutes until cheese is melted and filling is
hot. 12 Servings

Vegan "Cheese" Enchiladas


INGREDIENTS

Non-lard flour tortillas

Red Sauce
2 ripe red tomatoes
1 red bell pepper
1 red onion
2 cloves garlic
1 small jalapeno pepper (or 1/2 of a large one)
1/2 tsp. salt
1/2 tsp. Crushed red hot pepper
1/4 tsp. Black pepper
1/4 tsp. cumin

Filling
1 block of Vegan Rella soy cheese
1 bunch of green onions
1 red bell pepper
1 green bell pepper
1/2 jalapeno pepper

"Cheese" sauce
2/3 stick of margarine
1/2 cup flour
3&1/2 cup hot water
1&1/2 tsp salt
1 Tbsp soy sauce
1&1/2tsp garlic powder
1 pinch tumeric
1/4 cup vegetable oil
1 cup nutritional yeast flakes

INSTRUCTIONS

Make the red sauce by combining all of the red sauce ingredients in a blender. Next make the "cheese" sauce. Melt the margarine in a saucepan over medium heat. Beat in the flour using a wire whisk and continue to beat over medium heat until the mixture is smooth. Whip in the water, salt, soy sauce, garlic powder, and tumeric, beating well to dissolve the mixture. When sauce is thick and bubbly, whip in the oil and nutritional yeast flakes, then remove from heat. Grate the Vegan Rella soy cheese into a mixing bowl. Chop the green onions, red and green belll peppers, and add them to the mixing bowl. Mix in about 3/4 of the "cheese" sauce, and save the rest of the "cheese" sauce to pour over the top of the enchiladas. Using a fine grater, grate about 1/2 of the jalapeno pepper into the filling mixture. Using a large casserole pan, pour a layer of red sauce into the bottom of the pan. Moisten the tortillas by heating them briefly in a frying pan with a small amount of vegetable oil. (Usually makes 6 to 8 enchiladas.) Fill each tortilla with the filling and roll it up. Place the tortillas in the casserole dish, and pour the remaining "cheese" sauce over the top, partially covering the enchiladas. Finish covering the enchiladas with the remaining red sauce. Bake for 30 minutes at 325 degrees.

Cheese is a product from cow's milk. Cheese is not really meat.
You can have other cheeses, such as goat's cheese, or that fake cheese stuff.

If you like cheese - go organic!!!! :) It's much better for you with no hormones or antibiotics.

just cheese. it's actually called something else i think...but yes, they are made with only cheese, it's the way they are supposed to be made--however, the sauce they were served with could have been made with meat, or even worse, the entree could have been fried using lard..
yeah, i suggest not going out for mexican anymore! even if they say it is vegetarian, they probably have used lard anyway, to save money. :-(

Don't worry. If it was a real cheese enchilada, it only has cheese in it.

No, but the tortillas are softened usually in lard, which is animal fat.
You should always ask what kind of frying medium a restuarant uses....veg oil or lard.

No not usually, make sure you get Queso sauce instead of the chili sauce though.
