Does anybody know what is put into Taco Casa's cheese sauce? Ya know they serve the cup of cheese and a bag of tortillia chips for thier nachos. Well, our local Taco Casa just closed and Im devistated...lol. Seriously though, if anybody knows or could find out please write back.

I don't have one for that restaurant, but this one is very good
Chile Con Queso
1 1/4 cups
1 c. Asadero cheese (shredded) part-skim, not whole milk
4 oz. Jalapenos chopped and drained
or
4 oz. Poblanos, deveined & julienned
1/4 c. half & half
2 T. onion, finely chopped
2 tsp. ground cumin
1/2 tsp. salt
Heat all ingredients over low heat, stirring constantly, until the cheese is melted. Serve warm.

Yes Constance I know the recipe because I worked there years ago as a teenager. It's actually very very simple.
