Vegetable Lentil Wild Rice Soup

Ingredients (use vegan versions):

2 medium carrots chopped
1 large potato cubed
2 cups sliced cabbage
1 can diced tomatoes (32 oz.)
1 medium onion
2 cloves garlic
1 tablespoon thyme
1 tablespoon parsley
1 tablespoon garlic powder
salt & pepper to taste
3 cubes vegetable bouillon
1/4 cup lentils
1/4 cup wild rice
1 tablespoon olive oil

Directions:

Chop the onions and garlic and saute them in olive oil until they are almost cooked through. Add the spices, bouillon, 6 cups of water, the lentils and wild rice. Bring to a boil and then add the can of tomatoes (with the liquid) and the carrots, potatoes and cabbage you've prepared. Lower heat and keep at a simmer for about 30 minutes. Enjoy! Other suggestions for additions to this soup: Chickpeas, canned sliced green beans, and brown rice.

Serves: 6-8

Preparation time: 10-15 minutes

Tomato and Wild Rice Soup

This is a light, vegetarian, quick soup to prepare for either an all-vegetarian meal or to offset a heavy meat meal. You can vary the amount of broth or water to your desired consistency. Don't cook this soup too long, or you will miss out on the fresh herb and tomato taste.
Ingredients

* 5 T. olive oil
* 1 large onion, chopped
* 2 carrots, chopped
* 2 stalks celery, chopped
* 4 cups crushed tomatoes
* 4 or more cups vegetable broth or chicken stock
* 1/2 cup wild rice
* 1 T. salt
* 1 tsp. black pepper
* pinch sugar
* 2 T. fresh herbs (basil, parsley, tarragon)

Heat oil in large pot. Add onion, carrot and celery. Cook until vegetables are translucent, stirring. Pour in tomatoes, stock and rice. Bring to boil, cover, and reduce heat to a simmer. Add salt, pepper, sugar, and herbs. Stir often, and cook until rice fluffs, about 1.5 hour. Serves 4.

Ingredients:
Rice:
1 pint uncooked whole grain Minnesota Wild Rice
3 pints water
8 ounces diced onion
8 ounces diced celery

Soup:

1 large onion, diced
2 large carrots, diced
6 stems celery, diced
Salt & pepper to taste
3 cups all purpose flour
2 cups water
1 pound medium mushrooms, sliced
2 quart whole milk
2 quart heavy cream

Instructions:
Soup Preparation:
Add 1 pint of uncooked whole grain Minnesota wild rice to 3 pints of boiling water. Boil for approximately 20-25 minutes or until rice kernels open.

In a 2 gallon heavy saucepan, Add diced carrots and cook about 5 minutes. Add diced onion and diced celery; cook about 5 minutes more, or until the vegetables appear translucent. Season with salt and pepper. Add 2 cups of water and bring to a boil. Reduce heat.

Gradually add 3 cups of flour, whisking until roux forms, about 5 minutes. Gradually stir in 2 quarts of heavy cream. Add milk until desired consistency is reached. Bring to a simmer.

Add sliced mushrooms and the cooked wild rice mixture. Simmer 5 to 10 minutes more. DO NOT BOIL! Serve hot.

and another one

1/4 cup wild rice
2 cups water
2 onions, chopped
1 tbsp butter or margarine
2 sticks celery, chopped
1/2 tsp dried thyme
1/2 tsp dried sage
3-3/4 cups water or vegetable stock
1 vegetable bouillon cube
6 small potatoes, peeled and roughly chopped
1 carrot, finely diced
Milk or cream
Add the wild rice to the water, bring to a boil, reduce heat and simmer for 40-50 minutes until the rice has puffed and absorbed most of the water. Saute the onions in the butter, add the celery, thyme and sage and cook for 5-10 minutes. Add the water, bouillon cube and potatoes. Simmer for 20 minutes until the potatoes are cooked. Blend in food processor until smooth. Return to pan, add carrots and wild rice. Add the milk to thin the soup to the desired consistency. Reheat gently and serve.

1 small vegetarian
4lb mirepoix mix
4 qt. Coors light
3 oz EVOO
1 c. Italian white truffles
6 c wild rice
2 oz shallots
1/4 c walnuts

first don't get caught putting the vegetarian in to your trunk.
( they will put up a fright a real good fight, if you know what I mean)
remove arms and legs and keep to make a stock later
