I bought some arrowtooth flounder fillets at the local supermarket, and they turned to mush when I fried them. The taste wasn't too bad but the texture was so disgusting there was no way I could eat it.
An internet search revealed that's what arrowtooth flounder does when cooked so it's considered unusable by the fishing industry. So I printed that article and returned the fish and they gave me a refund, but they said they sell it because it's used in some Latino recipies. I then did another search for arrowtooth flounder recipies, but didn't find any, so I'm asking here.
Was the store manager making that up to try to excuse why they are selling "junk"or "unusable" fish? Or are there really recipies that use it?

I did a GOOGLE search for Arrowtooth Flounder recipes and the first link suggested was www.wholey.com/Irecipes

Flounder Roll-ups *
Prep Time: 15 minutes
1/2 package Wholey Arrowtooth Flounder Fillets, thawed
1 package Wholey Langostinos
1 egg white
1 tbspn. light mayonnaise
1/2 tsp. dry mustard
1/2 cup seasoned bread crumbs
1 tbspn. nonfat yogurt
1/8 tsp. salt
1/8 tsp. pepper
1/2 tsp. Worcestershire sauce
2 tbspn. lemon juice
2 tsp. low calorie margarine

Preheat oven to 400°. Mix langostinos with egg white, mayonnaise, dry mustard, yogurt, salt, pepper and Worcestershire sauce. Stuff fillets (by placing a small amount of stuffing on each one and rolling it inside the fillet) and sprinkle with lemon juice. Sprinkle each roll up with bread crumbs and paprika. Dot each with margarine. Bake for 15-20 minutes or until fish flakes easily with a fork.

Dilly Flounder *
Prep Time: 5 minutes
3/4 package Wholey Arrowtooth Flounder Fillets, thawed
1/4 cup fresh lemon juice
salt and pepper to taste
1/4 clove minced garlic
1 tsp dill weed

Preheat oven to 400°. Place fillets in baking pan coated with cooking spray. Pour lemon juice over fish. Sprinkle with salt and pepper, garlic, and dill weed. Bake for 5-10 minutes or until fish flakes easily.

Prep Time: 15 minutes
3/4 package Wholey Arrowtooth Flounder Fillets, thawed
1/4 cup parsley, chopped
1/2 cup shallots or onions chopped
2 cups mushrooms, chopped
1/4 salt
1/2 cup dry white wine
1/2 cup fresh bread crumbs
1 tbspn. low cal. margarine
1/8 tsp. white pepper

Preheat oven to 450°. Combine parsley, shallots or onions, mushrooms, salt and pepper. Divide in half and spread half in casserole dish coated with cooking spray. Place flounder fillets in casserole dish; cover with remaining vegetable mixture. Pour wine over all ingredients and top with bread crumbs and melted margarine. Bake for 8-10 minutes.

My guess would be to either use it in a soup/stew or after it breaks down, mix it with eggs and breadcrumbs and fry it up. I've never even seen arrowtooth flounder but I read up on how it breaks down. Bleh....

I've never heard of it, nor have any of my recipe sites.

I'm still searching...........the only recipe I could find is the one answerer 2 gave (above mine). I did find a chart for fish substitutions, where they grouped similar fish. It also provides cooking methods. I'd imagine if you have a recipe for one of these fish types, you can substitute with the arrowtooth flounder.

Tender fish like that do best seasoned simply and broiled/baked. Manipulation (like in frying) causes them to fall apart (as you discovered).
