lettuce... actually, i'm a vegetarian. thai food is fantastic in every way, and you can make it yourself or order out. stir fry in general is good. that's my number one choice. you could always eat a cheese pizza, a burrito with rice instead of meat, pasta in all kinds. a bean and rice and cheese burrito is really good. soups typically. soup with noodles is good. trader joes has a good veggie chilli. i love bagels, and a veggie sandwich or sub is good. use cheese, lettuce, avacado, peppers, anything really. try hummus also, probably a flavored kind. falafle is also good (chick peas), though i doubt if that spelling is right. i wouldn't eat meat substitutes except when you crave the taste, there are better, healthier options. try soy milk (try the silk brand "very vinilla" flavor).

From what I've read, vegatarians need to eat foods high in B12. I can't think of any off the top of my head, but from the books I've read, you really don't need to worry about protein as much as people say.
B12 and iron are the biggies. When looking for vegeterian cookbooks, make sure there is a section (usually in the front) that talks about all the vitiamans and minerals that you need. The fake "meat" out there is really good. I can give up meat, but I still love A1 Steak Sauce. I'll usually cook a veggie burger or the fake "steak strips" and saute w/ some onions and pour on my steak sauce. Just like at a steakhouse!

Good luck, make sure you eat a variety of foods and you will be fine. Even if you eat meat, that is a good rule to follow!!

Besides eating what others suggested, I have read that this category of people are lacking some type of protins and a type of vitamin B that only meat eating person gets. As such it was suggested , I think , to take supplements like spirulina and B complexs ( health food supplements). Spirulina is a most complete nutrition food except lacking vitamin C.

You could try veggie Middle Eastern and Asian foods. They are healthy, especially when homemade, and taste great. If not, try getting a vegetarian recipe book from your local bookstore. Also try "vegetarian magazine" or something close to that title (i don't really remember). I've been a vegetarian my whole life, and only recently began eating chicken. Oh, and make sure that the vegetables you buy are organic if you want to get the most out of what you eat.

I am not a vegetarian but I am interested to answer based on my knowledge. What I know is vegetarian it self can be divided into few types which is vegetarian who become vegetarian because of his religion and the 2nd type is vegetarian because of he want to be in this way, either because of want to improve his health or any reason. There are a few religion which claim their follower to become vegetarian such as Hinduism and also Taoism. I am not the follower of both religion so I do not know the details of their rules. If you want to be totally vegetarian, I suggest you to follow what Taos did. What I know they are prohibited to eat any meat, eggs or even sea food and onion. Pls correct me if I am wrong.
Being vegetarian is quite good. Your body will not produce bad smell since as we know bad smell is because of we eat meat.
You also need to take a lot of protein from soy bean since you have lost a choice to get protein from milk.

Dark green vegetables have lots of protein. And iron is in vegetables such as spinach, broccoli, beetroot in reasonable quantities as well as in nuts. Brazil nuts are a very good source. Soya is a good source however based on recent research, I would suggest using fermented soya such as miso and clear soya sauce and not overdo it on the soya. There are plenty of other alternatives to using something that is only helpful in small quantities.

The key is in the variety.

A good rule to follow is not to eat anything that once had a face. After applying that rule, the rest should be easy.
