I recommend "Sinfully Vegan." It's the best veg dessert book ever. Although all of Sarah Kramer's books have good dessert recipes. Her vegan pumpkin cheesecake, made with tofu and organic pumpkin, is FANTASTIC!!
Pumpkin "Cheese"cake
Ingredients (use vegan versions):
1/2 cup of sugar
1 15 oz. can of pumpkin
1 cup of soymilk (plain)
1/2 block silken tofu
1/4 teaspoon nutmeg
1/4 teaspoon cloves
1/2 teaspoon cinnamon
1/2 container of vegan cream cheese
1 tablespoon (or more) of maple syrup
Keebler Graham Cracker Crust
Directions:
Blend all ingredients (excluding crust, of course) in blender until creamy texture. Pour mixture into crust and place in the oven at about 400 degrees for 45 min - 1 hr 30 min (check in between time to make sure pie is becoming firm)
Refridgerate it over night. It's a bit oozey if you can't wait. Sometimes I just grab a spoon and eat while it's still warm...
How about NOG to go with it??? Fall is right around the corner!!
Pumpkin Nog
INGREDIENTS:
1 (29 ounce) can pumpkin puree
1 pint vanilla SOY ice cream, softened
4 cups soy milk
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 pinch ground nutmeg
Option: Vegan Whipped Cream
DIRECTIONS:
In a blender or food processor, blend the pumpkin, ice cream, milk, and spices.
Pour into individual cups.
Top with whipped cream and a sprinkle of nutmeg.

Eggless Chocolate Cake
2 1/4 cups flour
1/2 cup cocoa powder
1 cup sugar
1/2 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1 cup water
9 tbsp vegetable oil
1 tsp vanilla extract
1 tbsp apple cider vinegar (or white vinegar)
Preheat oven to 350F. Grease and flour a 9-inch bundt pan.
In a large bowl, sift together flour and cocoa powder. Whisk in sugar, brown sugar, baking soda and salt. Pour in water, vegetable oil, vanilla extract and vinegar, whisking thoroughly, but quickly, until the batter comes together and is quite smooth.
Pour into prepared pan.
Bake for 45-50 minutes at 350F (my oven was a little wonky, so do check with a toothpick), until a tester comes out clean and the cake springs back when gently pressed.
Allow to cool in pan for 10 minutes, then turn out onto a wire rack to cool completely. Once the cake as cooled, top with any glaze.

Fabulous site to try is www.vegweb.com. Has TONS of recipes for desserts, casseroles, cookies, cakes,... there's even one there for mac and cheese! I use it all the time! I'm sure if you look there, you'll find everything you need. And it's free too!

You can make mock cheesecake using tofu instead of creamcheese and cornstartch instead of eggs.
