I am trying to get my husband off of meat.. he will not eat Onion. anything else he can live with.

Pasta without meat.. them veggie burgers are great.. they have them at burger king now.. take him out today for a burger and let him sit down and order him a veggie burger.. if he eats it then ya can get them in stores.. grilled veggies is my favorite with a burger.. make him salads. start it off easy with him put some meat in his salad at first and just wean him off of the meat.

Vegetarian tortilla soup:

Three corn tortillas
Three cans of veggie broth
Three or four roma tomatoes
Garlic to taste
Onions to taste (or course you can exclude this if you want to)
Cilantro to taste
Shredded Mozzarella cheese
One or two avocados
Cooking oil
Salt to taste

Boil veggie broth, onions, garlic, tomoatoes and cilantro together until cooked, probably on low heat to avoid evaporating too much broth. While this is cooking, heat the oil in a frying pan and cut the tortillas into strips (I use a pizza cutter and cut only one way). Fry the tortilla strips until crispy and set on a paper towel to get rid of some excess oil. Slice avocado. Once the soup looks well cooked and is cooked to taste preference, place tortilla strips on the bottom of a bowl and pour the soup over it. Add avocado and mozzarella cheese to the top and enjoy! Makes about two bowls.

I love making this dish:

2 small zucchini, split in half and then cut in to 1" pieces
4 large mushrooms, split and chopped
2 cloves garlic, crushed or chopped
1 T. olive oil
1 T. unsalted butter

Heat butter and oil on medium heat and saute the garlic. Add zucchini and mushrooms and cook until zucchini is tender. Watch that the butter doesn't burn.

Viola! It's a very simple recipe, but it's very good! You could probably bake the ingredients instead and add cheese if you'd prefer.

Try this:

Zucchini Casserole

4 C. zucchini, sliced (I like to mix with yellow squash, 2 C. of each)
1 C. chopped onion (this you could omit)
1/2 cup butter*
1/2 chopped parsley
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. garlic
1/4 tsp oregano
2 eggs, beaten*
2 C. shredded mozzarella cheese*
8 oz. can of crescent rolls
2 tsp. mustard

Heat oven to 375 d. Cook zucchini and onion in butter* until tender. Stir parsley and seasonings together in a bowl. Blend in the eggs* and cheese*, then stir in the vegetables. Separate dough into 8 triangles. Place in the bottom of casserole dish and press to form a crust. Spread the mustard over the crust. Pour the vegetable mixture in evenly over the crust. Bake for 18-20 minutes or until done.

*If you have cholesterol issues (we do in our house) you can use PAM spray in either butter or olive oil flavor, use egg substitute, and use low or fat free cheese and it still tastes great!

I recommend substituting the meat with quorn, boca or morningstar farms products..at least at first. Quorn replaces chicken and it is so close, it would be very hard to tell the difference. Boca and morningstar make faux ground round that replaces hamburger meat in anything that calls for it like shepherds pie, lasagna, tacos etc.

Other ideas without the faux meats include Veggie stir fry, meatless lasagna, pasta and sauce and so much more.

Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

Pasta primavera is always good...saute in olive oil chopped garlic, red pepper, snap or snow peas, broccoli, mushrooms (any kind), cook till veggies are tender but not mushy throw in some pignoli nuts (pine nuts) you can also use onion powder if its the "onion" itself he objects to....then serve over penne pasta....sprinkle with fresh grated romano cheese.

Yes....take a red pepper, a yellow pepper and a green pepper...slice and grill in olive oil...salt and pepper to taste. Very simple...very yummy.

Place fresh spinach in a pan...you can use margarine or olive oil...cook until limp...sautee some almonds...serve.

Take artichoke hearts, sliced black olives and mushrooms...sautee with some garlic...toss into some penne pasta with olive oil.

ok first.....you can make anything you want to make all you need to do is substatute meat with immitaion if you want to be kinda sneaky try the ground boca meat then afterwards ask him if he liked the meal then tell him your secrete ingrediant...it might shock him.
