Traditional Indian food is cooked in ghee which is clarified butter. Therefore, even though the ingredients are healthful the butter does make the food high fat. I cook Indian at home and use olive oil instead of ghee. I eat the authentic Indian food once in a while. I can tell I have eaten a lot of butter afterward, my stomach feels rumbly and stuffed!

It depends on what you are eating. Hyderabadi food is very rich. Konkan food uses a lot of coconut, and in some parts coconut oil, but coconut is supposed to be good at lowering cholesterol. Most of the spices used in Indian cooking are also used in herbal remedies. The taste in Indian food comes from the spices not the fat content. North Indian food contains a lot of milk products like cream and yogurt, But they also eat a lot of spinach, and mustard which are good for health. I suppose it is the correct combination that you need to work out.

It's flavorfulness is not derived soley from fat but from the complex flavor profiles created by the spices used in various dishes. The spices include Tumeric, Corriander, Cumin, Saffron, Garlic, Peppers, currie powders, among others. Indian food is probably some of most flavorful ethnic cuisines in the world.

coming from a true indian who has grown up with indian food-- indian food is usually not good, but not bad for you if you use healthier oils. But to tell you the truth-- the indian food here doesn't compare to the home-cooked food in india (like with all ethnic foods). The ingredients are fresh-- but then they are fried.. it matters where you eat.

It all depends on the dish you are having. Some are low in fat while others are higher.
But fat does have flavour, cooking with ghee i standard in some areas, cooking oil is now cheaper and in use more often.
When I lived in Ceylon (Shri lanka) the prefer ed choice was coconut oil, and also coconut milk. This may be because people cook with what is available in the area.

It depends on which dish you are talking about and what ingredients you use. If you are talking about rice in clarified butter (ghee), that will be high in fat content. But something like a salad such as fottoush wil be low in fat.

Dishes that use a lot of oil or coconut milk or regular cream are not that low fat. In Indian cooking they use A LOT of spices...not just "spicey" spices..but spice in general. Its like a party for your taste buds.

Indian food in restaurants is off course not low fat....And it is far from tradiotional Indian home cooking which is simpler and definitely healthier.
