I would suggest letting the person make their own decisions. I'm sure they are quite capable. Sounds a little controling to me.

I'd speculate that it all depends on the company that is manufacturing the hot dogs. The Kosher and all-beef hot dogs are likely to have more natural ingredients than other brands. So while hot dogs are definitely not a healthy food by any means; some brands are probably no worse for a person than any other processed food out there.
Rather than trying to disgust or scare someone into stopping eating something, it may be better to encourage them to learn as much about nutrition and the benefits of eating whole unprocessed foods and make their own decision about how they treat their body.

I don't have any pictures sorry, but Gillian McKeith (You Are What You Eat programmes and books) did a programme once where the lady and her husband ate loads of hot dogs and Gillian showed them that they had loads of fat, gristle, noses, ears, and all the horrible bits from the pig in the hot dog. It was shocking. It all gets minced up and dyed pink so make it look appetising. However, what you choose to eat should not be inflicted on anyone, everyone has to make their own choices about what they put in their bodies, and if they choose to eat rubbish then it's their health at stake.

Feed them some Smart dogs. They're tasty and healthier than actual hotdogs. But if they want to eat hotdogs let them. It's their choice. And Kosher is probably a good way to go. The only hotdog meat that is Kosher is beef from the waist up, so no anuses or pig snouts.

Start with the nutrition label - that should be enough to put off some people. You won't find much 'horror' footage from a modern hot dog factory; anything that fits that bill would be outdated, which means if you use it you'll be a deceiver. You don't want to be a deceiver, do you?
Maybe you should let other people make their own informed choices and stop trying to shove your world view down their throats. Now *that* would be disgusting footage.

everything that is left over is put into hotdogs! yuck! Also at any major venu where they have hot dogs like the ballpark. The one's that are left over at then end of the night they freeze and then re-cook them the next time. lol (It's true I used to work at the ball park)
