Chipotle Chicken With Creamy Spinach
Serves 4
I N G R E D I E N T S
2 to 3 canned chipotle chilies in adobo, finely chopped (about 2 tablespoons)
1 1/4 cups crème fraîche
4 medium-large (about 1 1/3 pounds) skinless and boneless chicken-breast halves
1/4 cup chicken stock, preferably homemade
6 cups (about 10 ounces) spinach, stems removed, well rinsed

I N S T R U C T I O N S
1. Place the chopped canned chipotles and 2 tablespoons thick cream in a small bowl, and mix to combine.
2. Place the chicken in a large bowl, and pour the chipotle mixture over it, making sure to coat the chicken well. Cover with plastic wrap, and transfer dish to the refrigerator. Marinate the chicken 2 to 3 hours.
3. Heat the broiler. Place the chicken breasts in a baking dish (preferably earthenware) just large enough to accommodate them. Place the baking dish 6 inches away from the broiler, and broil chicken until deep brown in color, about 4 to 5 minutes.
4. Remove dish from broiler. Turn chicken breasts, and drizzle remaining 1 cup plus 2 tablespoons thick cream around the chicken. Return the dish to the broiler, and broil until chicken is deep golden and no longer squishy when you lightly press it with your finger, 4 to 5 minutes more.
5. Transfer the chicken breasts to a warm platter, and transfer platter to a warm oven.
6. Scrape the cream mixture from the baking dish into a medium-large saucepan. Add the chicken stock and the spinach. Bring the mixture to a boil over high heat, and cook, stirring constantly, until the spinach has wilted and the cream has reduced and thickened, about 3 minutes. Season mixture with salt, and serve creamy spinach with the broiled chicken.

I just love this question, and the answers you have elicited.
I have a bookcase full of ethnic cookery books, and a whole wall of shelves devoted to spices and things from most countries.
Our dinner tonight was not particularly exciting, (Just a salad, with rocket, lettuce, tomatoes, onions, garlic, a few other odds and ends dressed with strained yogurt) as we went out to a great restaurant for lunch.
A regular healthy and tasty dish we have - (like every other day) - is Cantonese Hot and Sour Soup, using lots of fresh vegetables seasoned with vinegar, white pepper, soya sauce and sesame oil.
(By the way, we live in the far flung part of the UK)

I live in England.
We had Ackee and Salt fish with Rice & Peas.
This is a traditional West Indian dish. My Son's father originates from Jamaica.
Every now and then I will make a West Indian dish for dinner.
Tomorrow we are having Fajitas.

I don't live outside the US but I made a big Egyptian meal like usual(well for the most part the tabouli is more Lebanese). I made Bamia Stew, Tabouli Salad, Mashi, and Sambousas.

I live in Canada, but did not have anything exciting today. But Sunday, I am going to prepare Sweet and Sour Chicken, a cucumber dish with vinegar and garlic, and maybe one more dish. Will see.

I live in Malaysia.
What I'm going to cook tonight is fried fish and sodi.
We normally marinate the fish with chili powder, fish curry powder, turmeric and salt. Then we deep fry it.
Sodi, I'm not sure of the spelling, is a dish cooked with coconut milk. My mom-in-law usually cooks it but I think the ingredients are, onions, cabbage, green chili, tomato, salt and coconut milk. It's very tasty.

We have today Srilankan 'kool' . This is a sort of soup, The base stuff is only find in Srilanka. Palmerah tree seed is let grown and from the (younger stem) Samen/ Sprossen of the embryo which is prepared.
The tastiest food item in my food list.
