How about a dream cycle cake. Make a white cake. When it is finished poke wholes in it and pour dissolved Cherry Jello over it. Then chill the cake. In the meantime either color your cool whip to look pink or you could use Strawberry cool whip. Then as a option you could put Maraschino cherries on top

I would make a big bowl of fruit salad. Easy and quick; just slice strawberries, bananas, plums, kiwi, grapes and any other fruit you can get in season. Add the fruit and juice to some honey and lemon juice. Add enough honey & lemon to make the salad just a little juicy. You can serve it plain or with whipping cream. Delizioso as the Italians say.

Cannoli dip
8 oz. cream cheese, softened
1 stick margarine, softened
1/2 cup sugar
1 tsp vanilla
1/4 bag mini semi sweet morsels
Beat the first 4 ingredients, then add morsels and mix by hand.
Eat by dipping animal crackers of graham cracker sticks
Voila, super easy! Enjoy!

You can keep the theme the same - I would go for Italian Ice or Gelato - very simple, can be purchased or made with a blender, and you can pretty much use whatever concoction of fruit to match the colors - for example, strawberries and peaches, with only a little bit of the strawberries to give the Italian ice a pink glow - same goes for the Gelato.

Something light. Maybe ice cream with a maccaroon; Or a pudding with nuts on top. Ice cream is the simplest and cleanse s the pallate.

We just had spaghetti for dinner at church tonight. They served cake for desert. Brownies, cupcakes, or ice cream would also be good desserts.
