I was thinking about becoming a vegetarian and i was wondering if anyone had any ideas for good meals minus the meat

Vegan Pizza

This pizza is so tasty that you will not miss the cheese!

Ingredients:

for the base:
500g./1 lb./3 cups plain flour, white or wholemeal
1 packet of easy blend dried yeast
200 ml./1 cup of warm water but keep adding until you get a good dough

topping:
1 tin chopped tomatoes (approx. 400g/14oz.)
2 tablespoons dried mixed herbs
2 tablespoons olive or sunflower oil
salt and pepper to taste
1 small tin of mushrooms or/and sweetcorn (optional)
sesame seeds for sprinkling on top

Mix the flour with the yeast and add the water gradually. Mix well (with your hands is best) and then knead for a couple of minutes until the dough is fairly smooth. Place on a large greased baking tray and flatten into desired shape (ie. - circle). Leave in a warm place while you prepare the topping: Mix together the tomatoes, herbs, oil and seasoning in a bowl and then spread over the pizza base. If using the mushrooms/sweetcorn - coat them in a little olive oil and arrange on the top of the pizza. Sprinkle with sesame seeds and bake at 200 C/400 F for 15 to 20 minutes until ready.

Variations - obviously you can add whatever toppings you like to the basic tomato mixture - olives, vegan 'cheeses', pineapple chunks, vegan meat substitutes etc. You can also vary the herbs used, add garlic and onion or add herbs or seeds to the base. If you want a softer base you can leave the dough to rise for half an hour before adding the toppings but we find it great without doing that.

Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

There are tons of them. One of my favorites is:

Stir together 2 tablespoons crunchy peanut butter, 1 tablespoon
reduced-sodium tamari or soy sauce, and 1 tablespoon orange juice or apple juice; set aside. Simmer 4 cups fresh broccoli florets in 3 cups water for 3 minutes and saute Quorn brand tenders according to directions. Drain broccoli and and toss with Quorn and sauce.

INGREDIENTS:
12 pitted dates
1/4 cup chopped, toasted pine nuts
3 tablespoons red wine
1/8 teaspoon ground black pepper (optional)
1/4 cup honey

DIRECTIONS:
Stuff dates with chopped nuts: the nuts are inserted into the space left by the pit.
Place dates in a small pan. Sprinkle with pepper if desired. Add wine, then drizzle honey over dates. Cook over medium heat until the skins begin to peel off the fruit. Transfer dates to a serving dish, and allow to cool slightly before serving

Moroccan Potato Casserole
"This is a very colorful dish, and a very tasty one. A dressing made from fresh herbs and spices give this vegetable dish a Moroccan flavor. It is a great vegan recipe!"

Ready In: 1 Hour 45 Minutes
Servings: 6

INGREDIENTS:
6 cloves garlic
salt to taste
2 teaspoons paprika
1/2 teaspoon ground cumin
1/4 teaspoon ground cayenne pepper
3/4 cup chopped fresh cilantro
3/4 cup chopped parsley
1 lemon, juiced
3 tablespoons red wine vinegar
3 tablespoons olive oil
1 1/2 pounds red potatoes, sliced 1/2 inch thick
1 large red bell pepper, cut into 1 inch pieces
1 yellow bell pepper, cut into 1 1/2 inch squares
1 large green bell pepper, cut into 1 1/2 inch pieces
4 stalks celery, cut into 2 inch pieces
1 pound tomatoes, each cut into 8 wedges
2 tablespoons olive oil

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Combine garlic, 1/2 teaspoon salt, paprika, cumin, and cayenne in a food processor bowl. Process until mixture forms a paste. Add herbs, and pulse a few times to blend. Add lemon juice, vinegar, and 2 to 3 tablespoons olive oil; blend. Season to taste with salt.
In a large bowl, combine potatoes, peppers, and celery. Season with salt, and toss with herb sauce. Transfer to a large shallow baking dish. Scatter tomatoes among the potato mixture. Drizzle 1 to 2 tablespoons oil over top, and cover with foil.
Bake for 35 minutes. Remove foil. Continue baking until vegetables are tender, 20 to 30 minutes. Serve warm.

Butternut Apple Soup

Cook & puree a butternut squash and 3 or 4 grannysmith apples

Remove skin, core, seeds, etc & puree

Add apple cider or cream and season with salt, pepper, nutmeg, ginger, cinnamon... whatever sounds good.



Tatziki

let 16 ounces of yoghurt strain through a cheesecloth overnight

grate a cucumber and allow it to sit overnight so you can strain out excess fluid (skin on or off, depending on your preference).

Mix cucumber (w/o excess fluid) and yoghurt cheese.

Season with fresh garlic, salt, pepper, and dill (for Mediteranian style) or mint (for Middle Eastern style)

use as salad topping or dip for veggies or pita bread.



Veggie chili dogs

Make Chili according to directions substituting veggie crumbles (Morning Star Farms or Boca) for ground beef.

Slit a cooked veggie dog (Morning Star Farms makes good ones), put on a roll and fill with Chili.

Top with cheese.

Veggie stir fry or Ma-Po bean curd and round it off with some cake :-)


"White Vegan Cake

Ingredients:

1-1/2 cups flour
3/4 cup sugar
2 tsp baking powder
1/4 tsp salt
3/4 cup soy milk
2 tsp vanilla
Egg replacer equivalent to 1 egg, beaten

Preparation:

Preheat oven to 350°F (175°C). Grease a cake pan. In large bowl, mix together flour, sugar, baking powder, and salt. Combine remaining ingredients, and add to flour mixture. Beat for 2 minutes. Bake for 30 minutes, or until a toothpick inserted in center of cake comes out dry.

Chocolate Cake

Ingredients:

1-1/2 cup flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water (or ice coffee)
2 tsp vanilla extract
2 tsp vinegar

Preparation:

Preheat oven to 375°F (190°C). Use a small brownie size pan (no greasing required). Mix all the dry ingredients right in pan. Mix all the wet ingredients in separate bowl except the vinegar (important!). Add wet ingredients to dry and stir until all dry ingredients are mixed. Add the vinegar quickly and stir in — immediately put the pan in the oven and bake for 25 to 30 min. Cool thoroughly.

Optional: after you add the vinegar, you can put some frozen cherries, raspberries or cranberries on top of the batter (or you can mix them in beforehand)

Applesauce Spice Cake

Ingredients:

1/2 cup molasses
1 cup applesauce
1 tsp cinnamon
1/2 tsp cloves
1 tsp baking powder
1/2 tsp baking soda
1-3/4 cup flour (whole wheat pastry flour is good)
2 tsp ginger (optional)

Preparation:

Combine the molasses and applesauce in a large bowl. Combine remaining ingredients and stir into the liquid. (If the batter seems very dry, add a little more applesauce or a little water.) Bake in a nonstick 8 x 8-inch baking pan or one sprayed with a non-stick spray, in a 350° F (175°C) oven, for 30 to 45 minutes, or until it tests done.

The optional ginger makes an acceptable gingerbread. You can also leave out the ginger and add 3 or 4 tablespoons of cocoa to make a tasty but not very sweet or rich chocolate cake.

Lemon Tofu Cheesecake

Ingredients:

Crust:

2 cups graham crackers
1/4 cup maple syrup
1/2 tsp almond extract

Filling:

1 lb. firm tofu
1/2 cup sugar
1/4 teaspoon almond exact
1 Tbsp tahini or almond butter
1/2 salt
1 to 2 Tbsp lemon juice
1/2 tsp lemon zest
2 Tbsp cornstarch dissolved in
2 Tbsp soy or rice milk

Preparation:

Crust: Preheat the oven to 350°F (175°C). Crush the crackers and mix them with the syrup and almond extract in a bowl until moistened. Pour into a 9-inch pie plate, press evenly to form a crust and bake for 5 minutes. Cool while preparing filling.

Filling: Blend all ingredients in a food processor or blender until smooth (about 30 seconds). Pour the mixture into the crust and bake until the top is slightly brown, about 30 minutes. Cool and refrigerate until thoroughly chilled, about 2 hours.

Vegan Cake

Ingredients:

1-1/2 cups flour
1 cup sugar
1/4 cup cocoa
1 tsp vanilla
1/2 tsp salt
1/3 cup oil
1 tsp white vinegar
1 tsp baking soda
1 cup cold water

Preparation:

Mix all ingredients together until smooth. Grease and flour a loaf pan, and bake for 45 minutes at 350° (175°C). You can also add chocolate chips and/or nuts.

Great Vegan Cake

Ingredients:

1-1/2 cups flour
1/2 cup oil
1 cup sugar
1-1/2 tsp baking soda
1/4 tsp salt
1 scant cup soy milk/rice milk/water

Preparation:

Mix ingredients and bake at 375°F (190° C) for 30 minutes in a greased pan.

Variations:

Sweet and Light Lemon Cake
add 1/4 cup of lemon juice in place of 1-4 cup of the water/soy milk/rice milk

Orange Cake
add 1 cup orange juice instead of the liquid and cut back sugar to half a cup

Torte
cut 1 or 2 apples into slices and lay them on top. You can sprinkle with cinnamon and/or sugar if you like."

Here a Cake Without Eggs, Milk, or Butter!
"2 c. raisins
1 c. sugar
3/4 c. brown sugar
1 c. water
1/2 c. canola oil
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. allspice
------------------------------
3 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
*1 c. chopped nuts

Combine first group of ingredients in a saucepan, and bring to a boil. Reduce heat and simmer for 5 minutes; allow to cool completely.

In a mixing bowl, combine second group of ingredients. Blend saucepan mixture with dry mixture until smooth.

Pour into a greased and floured pan, and bake at 350 degrees F. (9" x 13" pan, tube pan, or 'Bundt' pan, bake for approx. an hour; smaller pans require less baking time). Cake is done when a toothpick or knife inserted in center comes out 'clean' and when cake pulls away from the edge of the pan.
