I had a great dish of chopped pickled herring with chopped hard boiled eggs some years ago, with a friend with whom I have lost touch.
I pickled some herrings a few days ago, and would really like to make this dish, as it stands out in my memory as something special, that I have never been offered or seen anywhere else.
Can anyone give me a recipe

My friend was of jewish descent and I thought that the american contingent might recognise this.
Salted and pickled herrings were a mainstay of eastern european and scandinavian diets before the advent of refridgeration

You must be thinking about the German "Hering Salat".
2 Herring - cut into bite size pices
2 German Pickles, chopped
1/4 l soure cream, whipping cream or Creme Fraiche
1 Onion, chopped
2 hard boiled eggs, chopped
2 apples, like Granny Smith, chopped
fresh black pepper
Mayonnaise, Vinegar and Oil = enough to make a sauce
Make a sauce with Soure Cream, Mayonnaise, Vinegar and Oil. Add chopped pickles, onion, eggs, apples, black pepper. Add Herring and refrigerate at least 3 hrs. Serve with boiled potatoes...and of course a German Beer !!!! Guten Appetit

I don't know if you had the same , but in Russia we do it this way:
It is called "Herring In The Fur-Coat"
1. Hard-boil potatoes, peel them, finely chop them, and place them evenly on the bottom of the serving dish. This will be the first layer.
2. Remove all the bones, and finely chop the herring.
Place it on top of the potatoe layer evenly. This will be the second layer.
3. Chop hard-boiled eggs, place them evenly on top of the chopped herring layer in the dish. This will be the third layer.
4. Hard-boil beets, peel, finely chop or even dice ( there is this thing, it's a kitchen tool, I don't know how it's called in English, it looks like a flat metalic board with holes like razors in it), so you kind of like dice the beets on that board, so that they come out in little finely thin layers. Place them evenly on top of the egg layer in the serving dish.
5. Mix mayo with sour cream. Combine them so that you like the taste. You can use just mayo without the sour cream. Cover the beets layer with it. This is the last layer. You can serve it now. But better, let it stay in refrigerator for few hours or overnight.
Some people also add the carrot layer (prepared just like the beets layer). It's usually placed between the egg and the beets layer.
Others also like to add the onion layer. Fresh onions are diced and placed on top of the herring layer.

2 whole herrings
2 slices challah bread or other egg or white bread
1/2 cup apple cider vinegar
1 large mild onion, peeled and cut into quarters
2 hard-boiled eggs
dash of pepper
1 to 2 teaspoons mayonnasie
crackers
1 Wash herrings under cold water. Remove head, fins, and tail. Split belly and remove entrails. It is not necessary to remove the bones. Rinse inside well. Soak in cold water for 3 to 4 hours, making sure herrings are completely covered with water.
2 Soak bread in vinegar. Set aside.
3 Place herring, onion, hard-boiled eggs, and apple in a food processor and finely grind. Remove bread from vinegar, squeeze dry, and add to herring mixture. Mix in thoroughly. Add pepper and mayonnaise, mixing together well.
4 Serve with crackers.
