I mean,
it'd be like regular ice cream
except without sugar in it
and that's the only food with a variety of flavors out there that doesnt include cheese.

Well I like ice cream and I like cheese so it would probably depend on the flavor. I don't think Limburger would fly though....LOL...You might have to make a black pumpernickel bread and onion flavored ice cream to compliment the Limburger and maybe combine it as a swirl. That is the way Limburger cheese is combined when I have eaten it and it is great!! You would probably have to have a German beer flavored ice cream as a chaser/followup to wash it down. Just an idea here, and it would be an interesting experiment though. I wish you luck.

no, i would not eat it, as much as i love cheese, that sounds gross....funny enough, they made an icecream mixed with gorganzola cheese as one of the flavors, one with roasted garlic and one with carmelized onions on food network, 'ham about town' show just last week. then they had people try to flavors without knowing what they were--everyone hated the cheese and the garlic, but loved the onion!!!!!!!!

I think the ice cream chain, Cold Stone Creamery, has already beat you to this idea. Here they sell cheesecake ice cream and it's very popular. People eat it with different kinds of berries, but I like it with brownies.

You'd have to make it with sugar or some sort of sweetner. You can't believe how amazing cheese tastes with a little sweet.
