Does anyone know what a healthy, balanced, and maybe an energy boosting vegetarian breakfast can consist of? I sometimes eat Total brand cereal, fruit, vegetables, and maybe toast, but is that enough?

I have a fruit smoothie for breakfast, I just toss fruit (usually frozen strawberries, blueberries and banana) in the blender with some water and ground flax seed and blend away. It's very filling and keeps me full until lunch.

Cooked grains are very healthy and satisfying. I esp. like the 5-grain cereals available at natural food stores. Stir in some fruit, for energy, and drink some soy or cow milk for protein, or for protein spread your toast with almond butter. Yum.

Mashed Potato Pancakes
Prep Time: 30 Minutes
Cook Time: 10 Minutes
Ready In: 40 Minutes
Yields: 6 servings

INGREDIENTS:
2 cups sifted all-purpose flour
1 teaspoon salt
1 tablespoon baking powder
3 potatoes - peeled, boiled and
mashed
1 onion, chopped 2 eggs
1 cup milk
1/4 cup light corn syrup
1 teaspoon ground nutmeg
2 tablespoons shortening

DIRECTIONS:
1. In a medium bowl, mix together flour, salt, and baking powder. Stir in mashed potatoes and onion until thoroughly combined. In a separate bowl, whisk together eggs and milk, and stir lightly into potato mixture.
2. Stir in corn syrup and nutmeg, mixing well. Heat a large griddle to medium-high heat. Coat with shortening and spoon potato mixture onto griddle in 12 equal portions. Fry until brown on both sides. Serve hot

I drink a fruit smoothie with Whey protein. I have gotten several different shake and smothie recipes from allrecipes.com

kashi is amazing, and is pretty much aimed at vegetarians/vegans/people who care about what they eat. it has B12 added. they also make yummy grab and go stuff. try the cereal with soy milk (or rice milk if you're allergic to soy like me). kashi usually keeps me full until lunch, especially if i eat some fruit with it. just know that it's not packed with sugar, so it might taste bland at first, but keep trying new kinds until you find your favorite.

geez, I usually just eat a hard boiled egg and a glass of milk or juice! I'll be full til dinner!
