I'm not sure how Vegetarian you are: but as a normal rule poultry is not classified as a meat.
Here is a salad I have created:
Lettuce
shredded carrot
diced red onions
sliced boiled eggs
shredded cheddar cheese
dressing of choice
sliced almonds
Chicken Breast cubed into bite size
seasoning: Chicken Season, powdered garlic, salt, pepper combine and coat chicken pieces.
Fry in Vegetable oil until brown, add 3-4 Tsp soy sauce add diced red onions and sliced almonds, continue cooking until onions are soft.
Drain on paper towels to remove excess oil.
Add to above salad. Enjoy!

I'm not vegetarian but I love this recipe. I have made Haystacks several times. It's a meatless dish that you can change up.
Fritos corn chips, scoops or king size
Refried beans, any brand
Shredded lettuce
Chopped tomatoes or pico di gallo
Chopped onion..red, white, brown or green
Sliced black olives, any brand
Sour cream, any brand
Pre-shredded cheese, any blend & brand
Guacamole or freshly sliced avocado
Heat refried beans until liquidy, about 3-4 minutes in the microwave. Spoon onto Fritos & add toppings above in any order.
You can use corn tortilla chips but they get soggy before you're done eating. Fritos work the best.

Tex-Mex Salad with Chili Vinaigrette
Makes 8 to 10 servings
Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)
Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.
Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

6 cloves garlic
salt to taste
2 teaspoons paprika

3/4 cup chopped fresh cilantro
3/4 cup chopped parsley
1 lemon, juiced
3 tablespoons red wine vinegar
3 tablespoons olive oil
1 1/2 pounds red potatoes, sliced 1/2 inch thick
1 large red bell pepper, cut into 1 inch pieces
1 yellow bell pepper, cut into 1 1/2 inch squares
1 large green bell pepper, cut into 1 1/2 inch pieces
4 stalks celery, cut into 2 inch pieces
1 pound tomatoes, each cut into 8 wedges
2 tablespoons olive oil
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Combine garlic, 1/2 teaspoon salt, paprika, cumin, and cayenne in a food processor bowl. Process until mixture forms a paste. Add herbs, and pulse a few times to blend. Add lemon juice, vinegar, and 2 to 3 tablespoons olive oil; blend. Season to taste with salt.
In a large bowl, combine potatoes, peppers, and celery. Season with salt, and toss with herb sauce. Transfer to a large shallow baking dish. Scatter tomatoes among the potato mixture. Drizzle 1 to 2 tablespoons oil over top, and cover with foil.
Bake for 35 minutes. Remove foil. Continue baking until vegetables are tender, 20 to 30 minutes. Serve warm.

Check out the moosewood cookbooks. It all taste great and is vegetarian.
One of the best summer vegetarian meals in basil pesto.
Also, vidalia onions--if you haven't tried them--they're actually sweet.

The vegan sloppy joe creation I perfected myself and is a weekly Saturday supper- one cup each reconstituted textured vegetable protein, chopped onion, and ketchup. Two tablespoons each olive oil, hot sauce, chopped garlic, and Italian seasoning (oregano and basil) Mix and cook mid-afternoon or the day before. Marinate, and reheat just before supper. Serve over buns, rolls, or bread (I use rye bread.)

hmmm... i have a good one for you.
ok, you'll need:
tomatoes
onions
artificial crab meat
cilantro
green chili
you dice up the tomatoes, onions and cilantro. shred the artificial crab meat and then mix everything together. shake some salt in and then squeeze some lime juice on top of the mixture. toss well.
dice up the green chilis and it's your choice whether you want to mix it in with everything else or just mix it in with your serving later.
you can either eat this alone, or eat it with tostadas. yummy. :D
