Blackened Fish Fillets


"Fillets of firm fish (such as salmon, swordfish, halibut, etc.) crusted with herbs and spices and then grilled or pan fried until 'blackened'."

Well, I'm from Miami and my family is Cuban.... and there are a lot of Cubans in Miami so.... I guess the most popular specialty is the Cuban sandwhich-- made on cuban bread with sliced pork, ham, swiss cheese, some mustard/mayo, and a pickle.... yum! But we also have are famous black beans and rice with roast pork and yuca.... Cubans eat that for almost every special occasion... lol

And for dessert you can't forget the flan and maybe a cafecito cubano (cuban coffee).

I'm in Malaysia but not a malaysian. But here are some of my favorite malaysian food.

Nasi Lemak - rice cooked in coconut milk, shallot and ginger with a dash of salt. It is accompanied by sambal, fried peanut, cucumber, tomato, boiled egg.

Beef/Chicken Rendang - I'm allergic to beef so I eat chicken rendang, this is a spicy dish and best eaten with lemang or hot rice. good accompaniment for nasi lemak too.

Their chicken satay with peanut sauce is so delicious that you'll keep on eating it.

I'm half swiss and italian. Well the cheese-fondue, raclette (melted cheese with potatoes,gurkins,air-dried beef) and "veal Zurich style" are quite famous for switzerland besides of course local specialities. The italian kitchen is anyway world wide known but one of the best at least in my opinion is Persian (Iran) food. It's such a fine cuisine with superb flavours.If you ever have the chance to taste it (possibly homemade) go ahead. Bon appetit as the french say!

We eat a lot of this here in Ohio

Skyline Chili

1 qt. water
2 lb. ground chuck, crumbled
2 md. onions, finely chopped
5 to 6 cloves garlic, crushed
1 can (15 oz.) tomato sauce
2 tbsp. cider vinegar
1 tbsp. Worcestershire sauce
10 peppercorns, ground
8 whole allspice, ground
8 whole cloves, ground
1 lg. bay leaf
2 tsp. salt
2 tsp. ground cinnamon
1-1/2 tsp. cayenne pepper
1 tsp. ground cumin
1/2 oz. unsweetened chocolate, grated

Directions:
Bring water to boil in a 4-6 quart pot. Add the ground chuck (do not brown first). Stir until separated and reduce heat to simmer. Add onions, garlic, tomato sauce, cider vinegar, and Worcestershire sauce. Stir to mix well. Add peppercorns, allspice, cloves, bay leaf, salt, cinnamon, cayenne pepper and grated unsweetened chocolate. Bring back to a boil, then reduce to simmer for 2½ hours cooking time in all. Cool uncovered and refrigerate overnight.

Skim all or most of the fat and discard. Discard bay leaf. Reheat and serve over hot spaghetti, cooked al dente.


Finely-grated Cheddar cheese, chopped onion, red kidney beans. Serve oyster crackers and red pepper sauce on the side.

Two-Way - spaghetti and chili

Three-Way - spaghetti, chili and Cheddar cheese

Four-Way - spaghetti, chili, Cheddar and chopped onion

Five-Way - spaghetti, chili, Cheddar, onions and red kidney beans

Our country boast of it's diverse and rich cuisine. Each dish is special on its own right. Most popular is Adobo. It has many variant but the dry one is to die for...mmmmmm

But from my region..Bicol, the best is Bicol express or it's variant, laing! It's a taro leaves cooked in thick coconut cream with lots of red chilies....real hot!

Sinigang (thats a soup done with tamarine broth or tamarine seed..its a really sour soup..it can be done with pork, beef, shrimps, and fish--like milk fish, lapu-lapu)
