This group I have joined put on potlucks every two week. There is always a theme. This year it is countries around the world. I am stumped for recipies to represent Poland. I would appreciate your help?

Except for some cold fruit soups, most dishes are not vegetarian.
Always loved czarnina which means literally blackness but that's what they call duck soup. I just leave out the pork whenever I make it.
Okay getting to the vegetarian side. I found one recipe which was served as a main dish that may fit the bill that is not a soup.

Mushroom-stuffed Onions

4 large Spanish onions
Boiling water
2 hard rolls
3/4 cup whole milk
2 tablespoons butter, melted
1 cup sliced fresh mushrooms
2 tablespoons water
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup butter
1/2 cup boiling water

Skin onions; place in large saucepan. Cover with boiling water. Boil for 15 minutes or until onion meat becomes wilted.

While onions are boiling, soak hard rolls in 3/4 cup milk.

Melt butter in small skillet. Add mushrooms and 2 tablespoons of water to butter. Stir to mix. Cover skillet; steam until mushrooms are limp. Stir occasionally to prevent mushrooms from sticking.

Form a stuffing base by squeezing soaked hard rolls until a bread and milk sponge develops. Add cooked mushrooms, salt, and pepper to bread sponge to form stuffing. Mix well.

Press out centers of onions; fill with stuffing mixture.

Melt 1/4 cup butter in 1/2 cup boiling water. Use this butter and water mixture to baste onions while they are baking.
Bake in 400F degree oven 20 minutes or until tender.

Makes 4 servings.

Make potato pancakes....

peel about 10 potatos...then on a box grater, grate them, add one tablespoon to two tablespoons flour, 1 egg some salt and pepper and heat some slid crisco in a cast iron skillet....drop them in in pancake form on a high heat and cook until crisp on both sides and serve with sour cream. This is not something that you can perfect the first time out....keep trying.

Check out http://www.epicurious.com and do a search for Polish and/or Eastern European recipes. They have an advanced search which will allow you to be more specific as to ingredients. Also, I did a quick Google search for Polish cuisine, and came up with this site, which looks more promising for vegetarian dishes...

Pierogies. They can be stuffed with mashed potato and onion, mashed potato and cheese, sauerkraut, prunes, etc...We have a church group that makes them and sells them to the public twice a month.
