Why is it that in the Montreal area, otherwise Canada's gastronomic capital, you cannot
find a southern-style barbecue of any type (not Memphis, not Carolina, not Kansas City, not Texan, not anything!)

That's shameful! You should go into business yourself and open a restaurant featuring Barbecues of the Americas!

Because there's no demand for it.
People like making money, they provide what the dishes that the public wants. Sure you can make a demand, but that takes time and money.
The Restaurants in Montreal are good , but they are few great ones.

Coming from that city, I do know that rib and steak joints are very popular. And we DO like fried chicken.
