If you add water to any powder it is going to solidify to a certain extent.
If you keep cement powder in humid conditions it goes off, coffee powder is just the same.

Coffee powder is caable of absorbing moisture because caffeine is hygroscopic.When the caffeine absorbs moistue,the coffee particles agglomerate(stick together),forming the hard lumpy mass you are talking about.

because humid air contains moisture, once it settles in the freeze dried coffee, it is then changing its molecules. add enough moisture and it will evenutally become liquid.
