It's generally used as a base for soups, stews, casseroles, rice dishes, and gravies--basically anything that needs a significant amount of moisture, but which would benefit from the flavor and fat in the broth.
It's also a good thing to feed people who are on a liquid diet because of digestive problems with solids. The reason it is cited as a good thing for colds is because when it is seasoned correctly, it can help with congestion and sore throat. Any warm liquid can help with congestion, and any warm, salty beverage can help a sore throat, so chicken broth seems to be a favorite because it incorporates both.
Many recipes will call for chicken stock, which is basically the same thing.

Plain chicken broth is usually given to persons that are sick (colds, flu, so on). It's easy to digest and serves as a comfort food. The warm broth also helps to break up congestion...the steam rather as the consumer leans over it.

Curing colds? That's stupid! There IS no cure for the common cold and I'm damn glad there isn't! I wouldn't have anything to talk about were it not for colds, now would I?
