chicken is young fresh and tender.
Hen is the older bird which would be too tough to eat without hours of boiling.
The truth is, we generally eat baby animals, the adults are too tough.

A chicken is a hen. The mail "chicken" is a rooster. You would not want eat the rooster. Pretty tough and stringy. Don't why we ask for chickens instead of hens.. Maybe because female of some wild birds used for food is also a hen.

A hen refers to an older chicken - they are tougher and take longer to cook. Hens are best cooked in a moist heat so they are fabulous for stew or soup. But where a chicken may boil in 30 minutes, a hen will take two hours! But the stock and the broth will have a lot more flavor in them.

As far as I can work out, hens are the female of chickens in general. Cocks being male. Now I still don't know if there is any difference between a cockeral and a rooster!

actually they are not different its rather hen is a female chicken the one that lays eggs and rooster is the male chicken, most of the chicken that's being sold in the market and what we eat most of the time is the male chicken because hens produces eggs.

Hens are chickens that have started laying eggs on a regular basis so are older. Chickens are immature hens. Both are female. Roosters are male. Coquerals are immature roosters. Capons are neutered roosters. All are delicious and tender when cooked right !
