Certain body hairs are constantly growing, some even for a little while after death. Hair in the ear is always present, but much lighter and shorter when we're young. It is there to keep out foreign objects, as a buffer for the small particles of dust etc to be caught in, along with the waxy build up. Consider ear hair a defence system. Once you get old, some people's ear hair grows so long it juts out.
