I'm too busy to cook and cannot stand eating takeouts anymore....HELP....!!!

I'm a lazy cooker. So I conjure up ways to make recipe's easier.
If I will be doing stuff in the house but don't have time to cook, I get either a whole chicken or a rack of baby back ribs. If really lazy, I rub the meat in salt, pepper and butter. I add garlic if I feel a bit diligent. If I feel fancy, I marinate the meat in those McCormick ready made spices for 30 minutes.

Then I put it in a roasting pan and cover with foil. I shove it in the oven and cook it for 1 1/2 to 2 hrs. Then I do what I have to do around the house, like computer work, emails etc.

After 1 1/2 to 2 hours I uncover the meat and cook some more...from 20 to 30 minutes...and set the table and voila......soft and tender meat.

For fish..any fish,,,just add a dash of pepper, some salt and lemon juice.....pan fry or grill...simple...finished. Then just steam the veggies.

If really lazy.....make sandwiches. Tuna, chicken or any left overs. Add lettuce, tomatoes, onions and cheese.

I hate having to cook things that take a while as well, but my saviour was www.kraftkitchens.ca. They have amazing recipes and almost all of them are quick They have an area where you can even type in three main ingredients you want to use (those nights where you're low on groceries) and they will show you recipies you can make with them. It's a great site.

Slow Cooker Chicken Stew

Yields: 7 serving

INGREDIENTS:
3 pounds skinless, boneless chicken breast
meat - cut into bite-size pieces
1/2 teaspoon olive oil
3 cloves garlic, crushed
1/2 cup water
1 (10.75 ounce) can condensed cream of celery soup
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1/2 teaspoon Italian-style seasoning
1 apple - peeled, cored and cut into eighths
3 small red potatoes, cut into eighths
1 onion, cut into eighths
1 (1.25 ounce) envelope dry onion gravy mix

DIRECTIONS:
1. Heat oil in a large skillet over medium high heat. Saute garlic and chicken until lightly browned.
2. Place chicken and garlic in slow cooker; add water, soup, pepper, salt, seasoning, apple, potatoes, onion and gravy mix. Mix all together.
3. Set heat on Low setting and simmer slowly for 6 to 8 hours.

I make a quick chicken casserole. I boil 4 or 5 chicken breast fillets (fresh or frozen). Tear or cut the chicken up in a baking dish. Add 1 can cream of chicken soup. Either 1 can of mixed veg. or 1 bag brocolli and cheddar rice and about 1/2 bag of stuffing(like stove top). I throw it all together in a baking dish. Put it in the oven on about 325 or 350 and take it out when it starts bubbling. It doesn't take long to make and it's good reheated too.

Get a crock pot. You can make tons of stuff in one - from stews to roasts to ribs and on and on and on. You just put the ingredients in the pot before you go to work (on low) and when you come home at night your dinner is done.
For roast - put roast in with some Lipton onion soup mix and carrots sliced up. With some water. Cook on low all day long. When you get home cut up some potatoes and throw in there for about 30-45 minutes and voila - dinner. (Or make instant mashed potatoes and that is even better.) For the gravy use the liquid in the pot and mix with flour - or use canned gravy.
For stews or soups - put all the ingredients you want in the soup in the pot - with lots of water of course and cook on low all day long. When you get home your dinner is done.
For ribs - put the ribs in the crock pot add some onion salt and pepper. Pour barbecue sauce til it covers the ribs. Cook all day and there you go.
A crock pot is the best way to go when you want good meals and don't want to have to cook when you get home.

Bisquick's Impossibly Easy Cheeseburger Pie

It really doesn't get much easier than this. :)

Brown one pound ground beef with one large onion, chopped. Drain grease and sprinkle 1/2 teaspoon salt over beef. Mix in.

Spray a 9" pie pan with Pam and sprinkle drained ground beef in pan. Top with 1 cup shredded cheese.

Mix 1/2 cup Bisquick, 1 cup milk and 2 eggs. Beat well and pour over beef/cheese in pie pan.

Bake uncovered at 400 for 20 - 25 minutes.

Use a crockpot.
Chicken and rice: place boneless chicken strips or breast along with one cup cooked rice, one cup chicken broth and one 10 oz can of cream of chicken in crockpot. Cook 4 hours on low.

BBQ chicken: place chicken in crockpot, mix one tablespoon brown sugar with one bottle of favorite BBQ sauce and pour over chicken. cook 5-6 hours on low or until chicken is no long pink inside.

SPLIT ENGLISH MUFFIN, PUT ON "PIZZA QUICK" BRAND SAUCE AND THEN LET IT SET FOR ABOUT AN HOUR TO SOAK INTO THE MUFFIN A BIT, THEN PUT INTO PREHEATED OVEN ABOUT 375 DEGREES FOR ABOUT 5-7 MINUTES, THEN TOP WITH SHREDDED CHEESE MIXTURE OF MOZZARELLA AND SOME CHEDDAR CHEESE, AND CUT UP PEPERONI STICK, DICED PEPPERS OR MUSHROOM YOU CHOICE OF TOPPERS....THE LIST GOES ON.... AND SEASON WITH GARLIC POWDER AND SALT THEN PUT BACK INTO OVEN FOR ABOUT ANOTHER 5-10 MINUTES UN TILL CHEESE IS MELTED AND BUBBLY AND JUST STARTS TO TURN BROWN.
