She has a boyfriend of 3 years but she just can't seem to stop contacting him. My boyfriend says that he never contacts her but he's very cordial when she reaches out to him. It drives me crazy!

You should advise your boyfriend to have a civilized talk with his ex, which is for him to just nicely tell her that he's in a relationship and that you, as well as he doesn't (he shouldn't) feel comfortable associating with someone that he used to have a relationship with and is trying to devote himself with the one he his presently with. First ask yourself if you trust your boyfriend.. the second thing is tell your boyfriend how it feels to you that she contacts him. but it sounds like you have nothing to wory about. It sounds like they had a good break up if they can still talk ... If it bothers you that much you should be talking to him about this.....
