So what exactly makes a great chef. Definitely someone who can cook but sou-Chef and many others can cook great food with proven recipes. What do you think makes a great Chef and seperates a Gordon Ramsey from the guy at your favorite regular restaurant?

First of all I am sure that Gordon Ramsey is not that nasty working for him in his restaurant as opposed to the t.v. show, if he was he would have a very high turn-over of his staff...a good chef teaches, allows for mistakes, trusts his staff, is flexible and doesn't take everything too seriously.
I have been in the restaurant business for 28 years, have worked with some real asses who call themselves chef..it's a breath of fresh air when you are working with a chef who wants to know what you know, what you can bring to the kitchen..to let's make this job easy..my boss asked me the other day.."am I like that chef on Hell's Kitchen.."? No way, I wouldn't be here if you were!

A great chef has little ego, and is approachable & respectful. Personally, I refuse to work with egotistical chefs. And there are a lot of them out there.

I have had chef jobs where I given it a week or so, then instructed the owner that the restaurant would fold with his/her crazy ego-maniacal executive chef at the healm.

I'm always nice about it ... I let them know that I'm not interested in working with people that have no people-skills!

A great Chef understands that "this is a we operation,not a me operation".

A great Chef knows that their position is not the most important one in the kitchen...the most important positions are the hourly staff positions...

A great Chef knows the first and last names of his or her staff,a little bit about their families,and what they like to eat...

A great Chef becomes great by surrounding himself with great staff!

A great Chef leads by example...don't ask someone to do something you wouldn't.

A great Chef takes care of his staff, time off etc.

A great Chef defends his staff!

A great Chef doesn't compromise his standards to make life easier.

A Great chef finds comfort when he realizes that he's still somewhat of a good cook
instead of a cook that thinks he's a Great Chef

A great Chef respects his/her staff for the people they are
A great Chef will coach his/her staff into becoming better cooks, and people
A Great Chef makes everyone a birthday cake on their birthdays
And a Great Chef respects their associates right to privacy.

A great chef is one who shares his/her passion for what they do.
A great chef is one who shows the right way to preserve our culture in the kitchen....
A great chef is only as strong as his/her weakest link in the kitchen.
A great chef knows when to push and when to pull....

soux usually comes under the head chef they havent quite mastered everthing they are usually still learning as we;ll
Personally I think it is the clientelle that maketh the great chef
