It typically means the person is trying to impress the other person by showing how health-conscious they are. Sometimes people are too nervous to eat a big meal on a date. In these cases, ordering a salad is a good thing.
It could also mean that the person wants a small dish so that they can leave quickly. It could mean they have body image problems, which is never good.
All in all, I'd say look at how they eat over several dates and whether they're also nervous in other ways or self-conscious.

There is nothing wrong with salad. It's neither good or bad, it's just their choice. Some salads have just as much fat and calories as a regular meal. That fatty dressings, fried creutons, bacon, cheeses, ham, chicken...etc etc... SO ordering a salad just means the person likes salad.

Only if the person is on a diet.
By the way, a salad in most restaurants in the US can cost as much or more than a full meal with all the trimmings.

Salad as dinner is very popular. Plenty of people want just a big salad cause they LIKE it.
I'd look for other indications... Conversation, body language, etc...

Well, whats wrong with salad?
Maybe thats what they want.
Or, it might mean they are worried that you can't afford an expensive meal, so they're trying to keep expenses down.
